GRANDMA'S TRADITIONAL VEGAN TAMALES

TO MAKE OUR MASA YOU WILL NEED:
-A MIXING BOWL
-3.5 CUPS OF CORN FLOUR OR 1KG (You can use MASECA).
-3 CUPS OF WARM WATER
-SALT TO TASTE (WE USED 3 SPOONS OF SALT).
-2.5 CUPS OF OUR RED CHILE SALSA (SEE BELOW FOR SALSA).
-3 pinch of baking powder
-2 TO 3 CUPS OF OILVE OIL
MIX UNTIL YOU GET A NON STICKY MASA
CHILE SALSA:
-6 Chiles Cascabel (Cascabel Pepper)
-2 Chiles pasilla or pisado (Pasilla pepper)
-1 garlic clove
-3 cups of the same water you used to boil the chiles in.
-Cumin to taste (we used 2 spoons of cumin).
First remove the seeds from the peppers then bring them to a boil. Next add the chiles and the rest of the ingredients into a blender.
JACKFRUIT “MEAT”:
-2 CANS OF JACKFRUIT COOKED WITH THE CHILE SALSA.
-RINSE AND REMOVE SEEDS FROM THE JACKFRUIT.
-LET SIMMER FOR ABOUT 30 MIN.
SALSA FOR TAMALES:
-2 jalapeños
-5 tomatoes
-1/2 onion
-A handful of fresh cilantro
Cook the ingredients expect the cilantro for 10 min at medium heat then blend the ingredients, finally add the fresh cilantro.
TAMAL LEAVES (CORN HUSK)
-1 package of hojas para tamales (corn husk).
Soak the laves overnight or 2 hours before using them.
PREPARATION OF TAMALES:
-Grab leaves and add the MASA and Jackfruit or beans in the middle fold them and close.
-Once you have all your tamales ready place them in a casserole with about 2 cups of water in the bottom.
-Cover them and bring them to a boil.
-Then reduce heat to low and let them cook for about 1.5 to 2 hours.
-How to know when they are ready? peel them and if the tamal comes right off you are good to go. Some tamales might take longer depending on how thick you make them.
We made about 30 tamales, but you can make more. We made ours thick.

Just made this for New years but instead of jackfruit I made three different types: vegan cheese, soy chorizo and beans, beans and Mexican rice. And they turned out really delicious! My family (non vegan) really liked it.

Hey, I'm not so sure about Mexican cheese but what I used for the Tamales was the "Follow your heart vegan gourmet shreds" In white mozzarella. To me this is my favorite vegan cheese so far, even my family who are really "non vegan" picky eaters liked this cheese on my tamales. The green tomatoes tamale will go well on this cheese/recipe. Also, I'm a cheese lover as well :)

Violife's vegan feta block is the most reminiscent of queso fresco to me. It crumbles and has a very similar taste. Hope that helps.
I make tamales every year with my grandma since I was small this is going to be a new treat.. a lot of oil but if people only knew how much animal lard is used on traditional tamales the olive oil is no big deal in this recipe

Omg yes! My mother in law uses at least 10 blocks of lard when she makes tamales. 3 cups of olive oil is nothing when compared to how much lard is in traditional tamales.

Thank you so much for this video! I've made tamales with my walita and tia but wanted to make traditional vegan tamales. I've seen other videos using beans, pablanos, eggplant, mushrooms, etc. but, none looked as much as the texture for pulled pork as jackfruit and I didn't know they had canned! Thank you so much for this cooking tutorial, I ended up with dry chilly pasilla, dry chilly California, and one more but I forgot the name. It's a dark red thin looking chillies. And followed all the steps. Nobody could believe that I made these. They thought it was pork or beef tamales. My vegan boyfriend was surprised that I made these just for him. Hopefully he sees that I support his decision on being vegan, maybe one day I'll be vegan, who knows?. But I'm glad that I impressed him with my cooking skills and how to follow a recipe skill. I just made these. It was my first time EVER making tamales and they came out great! I added my own spices to the masa and chili sauce to give it more flavor but great recipe. Thank you so much for sharing. Your madre y abuelas are the best!

I recommend coconut oil in place of lard in recipes because it has a similar texture, melting point, etc. It works really well for tamales.
