Vegan Jackfruit Tamales
Tamales rojos de jaca -

Guajillo red sauce:
6 guajillo peppers -remove seeds and stems
2 chiles de arbol, remove stems
4 garlic cloves
1/4 of an onion
1-1/2 tsp vegan chicken bouillon paste -I used Better Than Bouillon
1 cup water
Fill a small pot with water, bring to a simmer, turn off flame.
Place dry guajillo peppers and chiles de arbol in hot water.
When guajillo peppers are soft and tender, toss the water.
In a blender cup place all peppers, garlic cloves, piece of onion, vegan bouillon and water.
Blend until smooth, add a splash of water if needed.
If your sauce is lumpy with big specs of chili, pour sauce through a strainer.
Save a 1/4 cup of guajillo sauce for your masa

Masa:
2 - 1/2 cups of nixtamalized masa flour for tamales -I used the brand Maseca.
1/2 tsp salt
1 tsp baking powder
3/4 cup olive oil Or *neutral tasting oil for better flavor
1/4 cup guajillo sauce
Make a simple veggie broth:
(I’m using the brand Better than bouillon)
Mix 1/2 Tbsp vegan chicken or vegetable bouillon paste with 2 cups of water
In a large bowl add masa flour, salt and baking powder. Mix.
Slowly add vegan broth as you knead or mix if using a stand mixer.
When everything is well combined, add oil (I am currently making this recipe with a good neutral oil, it gives it a better flavor.
Continue mixing.
Lastly add the red guajillo sauce
Continue kneading, taste masa for salt. Masa is ready when it is soft and fluffy with the texture of ice cream, it should be spreadable.

Jackfruit “pork” (Updated Recipe)
1 can of jackfruit (2 cans If you’re not adding vegan chicharron)
1 -1/2 cups of chopped vegan chicharron (fried beancurd) optional
2 Tbsp avocado oil
1/2 cup finely diced onion + pinch of salt
Guajillo sauce (recipe at the top)
1 tsp onion powder
1 tsp nutritional yeast
Optional dilute 1 tsp of miso paste with a splash of water
1-2 tsp vegan vegetable Knorr bouillon powder, more to taste!
Start by prepping your canned jackfruit.
Drain jackfruit, then rinse.
To remove brine taste fill a pot with water, bring jackfruit to a boil. Toss water and repeat atleast twice or until jackfruit has a neutral taste.
Drain jackfruit, squeeze dry and shred.
To a hot pan add oil, diced onions and a pinch of salt.
When onion becomes translucent pour red guajillo sauce.
Bring sauce to a slow simmer over a low-medium flame, about 2 minutes.
Add shredded jackfruit, vegan chicharron and seasonings.
Taste for salt.
After 5 minutes turn off flame.

You’ll also need corn husks.
Be sure to rinse them clean, soak in hot water until they become soft and manageable.
Pat dry with a clean kitchen towel.
Assemble your tamales:
Spread a heaping spoon of masa onto the soft, non rigid side of the corn husk.
Leave space between the edges so that the masa doesn’t spill out when cooking.
Spoon in jackfruit, place in the center of the tamal.
Fold corn husk into tamal shape.
Fill a large pot with water, place steamer rack inside, water should never touch your tamales.
Line the inside of your pot with corn husks.
Place tamales inside, open side up.
Cover the top with more corn husks and a clean kitchen towel.
Place lid, steam tamales over a low-medium flame for 50 minutes.
Turn off flame. Let tamales sit for 20-30 minutes before eating.
Makes approximately 13-16 tamales depending on their size.

    Thank you! Finally, a "Vegan" Temale Recipe that adds Chile to the Masa. My Grandma, used to make her's the same way but with Pork. Sadly, My Grandma, went to Heaven in 1984 & took her Recipe with her. I haven't had a descent Tamale since! Now, that I am Vegan, it impossible to find "Vegan" Tamales in Oklahoma. So, I will be copying this Recipe & making my own. I can Taste them now! Yum! I MISS My Grandma, yet this Recipe will make her feel like She's with me♥️ Blessings from Oklahoma, Piper

    Receta: ___ Salsa roja: 6 chiles guajillos 2 chiles de arbol 4 dientes de ajo 1/4 de cebolla 1 - 1/2 cdta de consome Knorr vegano de vegetales 1 taza de agua En vaso de licuadora agrega los chiles ya hidratados con el resto de los ingredientes. Licua hasta obtener consistencia de salsa. *Aparta un 1/4 de taza de salsa para la masa* ___ Masa: 2 - 1/2 tazas de masa harina nixtamalizada para tamales 1/2 cdta de sal 1 cdta de polvo para hornear 3/4 taza de aceite de oliva *O aceite con un sabor neutro para mejor sabor 1/4 taza de salsa roja (receta arriba) Caldo de consome: Disuelve 2 Cda's de pasta de consome vegano sabor pollo o vegetales, yo use la marca Better than bouillon, con 2 tazas de agua En un recipiente grande combina masa harina, sal, polvo para hornear. Agrega el caldo de consome vegano. Continua mezclando. Agrega aceite. Mezcla, luego agrega la salsa roja. Prueba por sal. Sigue amasando hasta obtener consistencia suave, como la de nieve. __ Jaca en salsa roja : (Receta actualizada) 1 lata de jaca 1 -1/2 tazas de trocitos de chicharron vegano (beancurd frito) 2 Cda’s de aceite de aguacate 1/2 taza de cebolla picada +pizca de sal Salsa roja (receta arriba) 1 cdta de cebolla en polvo 1 cdta de levadura nutricional opcional:disuelve 1cdta de pasta miso con un poco de agua 2 cdta’s de Knorr de vegetales (vegano) mas al gusto Sal al gusto Antes de cocinar con jaca enlatada, hierve la jaca en agua, luego tira el agua y repite este paso hasta que el sabor de vinagre se quite. Luego exprime y deshebra. A un sarten caliente, agrega aceite, cebolla y pizca de sal. Ya citronada agrega la salsa, deja que llegue a un hervor lento por mas o menos 2 minutos. Agrega la jaca, chicharron vegano y el resto de los ingredientes. Combina todo muy bien. Prueba por sal. Apaga el fuego a los 5 minutos. ___ Asembla tus tamales. Cocina en una olla vaporera por 50 minutos. Apaga el fuego. Deja que los tamales reposen en la olla por 30 minutos antes de comer. 💚Aproximadamente 13-16 tamales dependiendo de su tamaño.

    Thank you so much, I am making these tomorrow for my husband....he misses Tamales now that we are vegan. Now I just need to find a recipe for sweet Tamales like his Lela used to make....they had pineapple in them.

    I haven't bought jackfruit again cause I also hate that wierd flavor. I thought it was the jackfruit ! Definitely gonna try your boiling method.
