Mole Poblano Recipe.

Recipe
Ingredients:
1/2 Cup Pepitas
1/2 Cup Peanuts (skinless)
1/2 Cup Almonds (skinless)
1/2 Cup Sesame seeds
1/4 Cup Raisins
1/2 Cup Plantain (half of a plantain)
1/8 Cup Cinnamon stick (less than half a cinnamon stick)
2 Bay leaves
4 Whole Cloves
1 Small onion or half of a regular onion
4 Garlic Cloves
1 Tbsp Anise seed
4 Chiles Mulatos (remove seeds and stems + cut open)
3 Chiles Anchos (remove seeds and stems + cut open)
1 Chile de Arbol (Optional add more for a spicy kick)
1 Vegan Bolillo cut into pieces
Vegetable oil
In a skillet over low to medium heat add 1 tsp of vegetable oil per ingredient.
*One at a time toast the ingredients listed above, careful not to burn them.
Set toasted ingredient asides.
Remaining ingredients..
1 Mexican chocolate tablet (I used Ibarra brand)
1/8 Tsp Ground cumin
1 Tbsp Vegan chicken bouillon
4-5 cups of water
1/2 tsp Salt
To a blender cup add the toasted ingredients along with the Mexican chocolate tablet, cumin, vegan bouillon, water and salt.
Blend until smooth.
Pour mole blend into a large pot, simmer for 7-10 minutes over a low flame.
Adjust salt or vegan bouillon to taste.
NOTES:
Is your mole too thick? Adjust by adding more water.
Not spicy enough? Blend more chiles de arbol.
Not sweet enough? Add sugar to taste.
Serve over your favorite plant based meat
Garnish with sesame seeds

    glad i came across your channel i'm from a mexican family and I really want to become a vegan these options are just great. And super accesible btw I live in Mexico which means its harder to get by vegan products !

    Love it!!!! I'm from Oaxaca, and this is a MUST to eat! But this is the first good VEGAN recipe! Its been a struggle to find good Mexican recipes since I became vegetarian.... THANK YOU SOOOOOO MUCH!!!!!!!

    you made this look so easy! saving this recipe for a special occasion. I had the best mole when I visited my aunt in puebla. it was delicious with home made tortillas. I love my mole to be sweet not bitter that's how I grew up eating it. thank you so much for this recipe! you are the best! feel so inspired to go out and get these ingredients and try it this week.

    If you can't find vegan chicken bouillon, you can sub for the chicken flavoured seasoning that comes in those instant ramen packs (Mr. Noodle, etc). Yup, chicken flavoured ramen is vegan!

    Yes it is, most bolillos are vegan by default. They're usually made with flour, yeast, water and salt. But on rare occasions specially at Mexican panaderias I've found that some add pork lard :| Always ask the baker to ensure🙂

    o0odeyanirao0o Yes, bolillos are made with simple plant based ingredients like: yeast, flour, water, salt. But some do make theirs with Lard. When purchasing ensure their bolillos are made with Vegetable Shortening 😊
