    I moved out of town about 20 years ago, but I remember El Cholo’s tamales as being the best I’ve ever had. Moist, tender, light, fluffy and a little bit sweet. The tamales I’ve had since moving away are rather dense and taste like masa. El Cholo’s tasted like fresh sweet corn (their use of cheese was actually very light). I’m going back soon and I hope their tamales are still as good as I remember them.

    Me and my family use Manteca to soften the Masa and whenever they get cold, they won't be stale. So just processed Masa from the market and Manteca. We make mole poblano, pollo verde o rojo, puerco rojo, queso, rajas.

    Yeah the use of sugar, milk, and butter was what surprised me! Our family just used manteca, or vegetable shortening, and stock. These look so good though!

    Wow. My grandma used to make tamales like these. Only she used a grinder and molcajete to give the corn the fine texture. It took so long to make. I used to think the way others made tamales was weird because of the process my grandma used. They used to say we did it wrong. The diversity in Mexican cooking is so amazing. She was awesome & what she taught me will last a lifetime. 🥺♥️

    I make mine like I learned as a child, molcajete was used, other ways seem weird to me. However, everyone makes their food and family foods differently, it is the beauty of food.

    Here in the Philippines we used to do it with glutenous rice, and coconut milk. Then we add the cooked tamales with souce that we called "latik".

    oh my. I remember that in the 1970s and 80s my favorite place was El Cholo on .i think Alvarado St in Los Angeles, and my favorite meal was green corn tamales. I haven’t had green corn tamales in many, many years and I would love to have some. I am now 88 years .old.

    @@smoothhead4766 yeah, with tamales its just food, just like the ice cream man or whatever... its not buying drugs, just food. Haha It's more common to do in Mex. Oh & everybody will make tamales different too, some good, others better, a few maybe not- so -great, either way its definitely worth to try from diff. vendors & 1 of each bc there are diff.flavors fillings too, both savory & sweet. You have your protein, your carbs, & just need your fresh fruit or vegetable for a complete meal. Dont eat too -too often though, since they're typically high in calories due to the fat/oil content. :)

    FFS it's TAMAL, the singular is tamal, not tamalE. The last "e" is part of the plural, tamalES, similar to say box, the plural is boxes so the singular is box, not boxe.

    Well, before anyone gets on their high horse and becomes the vocabulary police, there first needs to be an understanding of where the word for this dish comes from. Then they need to understand the bastardization of a language and its culture as a way for colonizers to erase the indigenous people and their history. The word of origin for this dish comes from the indigenous Nahuatl word, tamalli. So, when a person refers to the singular term tamale, they are more closely honoring the roots of the dish, culture and word. So one can make peace with people using tamal and tamale interchangeably and let people say how they please. Or, be advised that even your insistence on referring to a tamalli as a tamal is in fact incorrect.
