Flaky Biscuits for Two using Whole Milk

This is how to make great, flaky biscuits using ordinary All Purpose flour and whole milk. I hope you enjoy making them.

Ingredients:
1 cup AP flour (149 grams)
1 teaspoon sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
3 tablespoons cold, regular, salted butter (42 grams)
A little less than 1/2 cup of whole milk (100 grams)
Bake at 425 F (218 C) for 10-12 minutes or until golden brown

    Some of y’all comments are so ungrateful. Ken made a video tutorial how to make the dern biscuits. Y’all are complaining he didn’t make enough. Do you think he needed to make 16 trays of biscuits to get the concept? He made a decent portion for you to get the idea of how to make the biscuits. SIMPLE.😊

    I am gonna add to your comment, and I will be a shoutin': HELLOHHH! FLAKY BISCUITS FOR TWO! FLAKY BISCUITS FOR TWO! FLAKY BISCUITS FOR TWO! What does one NOT get about THIS video is for a 2-SERVINGS ONLY recipe? That is PRECISELY why I wanted to watch this video. Not everyone WANTS to make 12,16, 24, 48, and so on, biscuits. EYE wanted to make biscuits for my husband for breakfast as a special treat. USUALLY I get the frozen, "all ya gotta do is bake" Southern Style. This is going to be a great addition to my recipe box.

    I am an extremely busy mom 5 children husband who passed from cancer I have no time to run to the store I had everything to make these they turned out so good I couldn’t believe it thank you so much you saved my day!!!!!!     I know it’s been a while since this was uploaded, but I absolutely love these KZreadrs that show you how to make food in small portions, the majority of people watching cooking tutorials usually don’t need 20 biscuits. All I want is to be able to make a Egg, bacon, and cheese biscuit in the morning, without any leftovers.

    I end up with 15 biscuits and it lasts for days...all I need is just the amount of this tutorial. Then I can repeat the same in a few days but end up with fresh ones. Fresh is so much better!

    That’s nothing new. I hate waste.I make enough for two period! I like fresh! You don’t make a dozen eggs and bacon and eat them for the rest of the week.

    My grandpa in Oklahoma used to make biscuits when I was a kid in the 50's (I'm 72) that you'd have to nail to the table to keep 'em from floatin' away. Sadly, I never paid attention. My mom?? She tried. Sadly, you could use hers for hockey pucks.

    Me too! I failed at biscuits yet again this morning so Im hunting around for tips/recipes. I like this bc if I dont get it right I’m not wasting 4 cups of flour!

    I am definitely gonna make these! But here’s a tip, instead of breaking the butter up by hand, you can get a cheese grater and grate frozen butter into your mix. Saves time!

    I'm 55 years old and I have never made biscuits before as I've been slowly teaching myself how to cook for the past year. And when you're just cooking for a very small batch this was perfect and I thank you so much Ken for the simple and easy instructions.     I started back making biscuits the year before last. This was the first time since I was teenager in the early 1970's. I was in the mood one night and made some. You should have heard my wife when she tried one.😂 "You're the official biscuit maker now," she said. After I cut the butter into the flour, sometimes with cheedar, I put the bowl into the freezer for at least 20 minutes. Then I mix the milk/cream in. My finicky sister says mine with cheese remind her of Red Lobster's.

    I am a 60yo recent widower who's been learning to cook for himself on a regular basis. I've been doing the two-ingredient self-rising "Quick Biscuit" box recipe for a while and while it did the job, it just wasn't what I was looking for. Your recipe wasn't much more work and definitely tastier, fluffier, and flakier with just a touch of crispy crunch on the bottom.     I'm with you! Seems almost harder to cook for only 1 or 2 people! lol. I'm so used to cooking for a bigger family! I dont miss the dishes and clean up (Lol) ...but I do miss cooking for everyone!

    Now that's what I call biscuits! I'm 89 years old and I've made biscuits with plain flour and sweet milk for many many years. My mother and my grandmother made biscuits like this. There's a lot of buttermilk biscuit recipes, and I have nothing against buttermilk biscuits, but sweet milk biscuits are the ones that break into layers, while the buttermilk ones are fluffy and a little more cake like. It all depends on what you like. I'm just glad to see someone speaking up for those good old sweet milk biscuits. Great video. I like your use of the word "gentle." It speaks of respect and appreciation for a good, homely item of food that has been loved for generations.

    My grandmother made a recipe like this, I never knew what happened to her cookbook. I want to try with whole wheat flour, how would I add whole wheat or multi grain flour? Do I need to also use white flour? Great video!

    I used 2% and they turned out great in case anyone else only has 2% on hand and get a craving for baking powder biscuits. I'll definitely be making these repeatedly. Thank you so much Ken.

    I am a good cook but have struggled with biscuits for so many years that I now always buy frozen. Today my hubby and I decided to try this recipe. I doubled the ingredients.     I made Vegan biscuits on accident...This was a perfect beginner easy flaky biscuits recipe! I followed your instructions (with my substitutes: almond coconut milk instead of cow's milk, plant based butter instead of cow's butter), and it was so easy to do. I wasn't trying to make a vegan version, but that's all we had in the apartment at the time. They tasted really good too. Because I don't cook with much salt, I'll put a little less than 1/4tsp of salt in next time and hope I don't mess it up. LOL. Thank you so much for sharing. You're a fantastic instructor.

    Made these this morning. Man oh man are they ever good! Came out perfect and I followed Ken's vid step by step. My picky elderly mom LOVED them which made me happy. This is definitely a keeper and I like the fact that they only make 4 biscuits and a "runt". :)

    I made them today for the first time, because in my country, this is not customary to eat... I am from Venezuela but my husband is American... it was a litmus test for me to make biscuits and for him to like them and he told me they are the best What he has eaten in his life... thank you thank you thank you!!!     @@michellecarl1255 Yes I use both, esp. in the winter I stock my shelves with both canned milk & powered milk because the road I live on runs along the river, many times the road is too icy to drive on so winters I have to stock up, it doesn't change the taste.

    I must say, that I appreciate how you explained that this was for the novice person. Making biscuits can be very intimidating for some people,and you presented yourself in such a soothing and down to earth 🌍 manner that has probably made a lot of people run 🏃‍♀️ to their kitchen with growing confidence in their ability to bake your wonderful biscuits.     I must try them. I’ve been an excellent “scone” maker for about 75years. I would have expected them to be leathery with the handling they got, but the finished style proves that not to be the case. I’m most impressed. We’re in total lockdown right now in New Zealand, so these would make a delicious lunch tomorrow

    Obviously you haven't read a cook book! Biscuits are made with 2 cups flour, 1 tablespoon baking powder, 1 teaspoon salt, 1/4 to 1/3 cups shortening, and 3/4 cup milk. These ingredients are called STAPLES. A staple is a food which is used regularly in cooking. Get a cookbook!

    Just made a batch. The best biscuit recipe ever! You can always doible, triple, etc the recipe. One tip- throw the butter in the freezer for half an hour and use a cheese shredder. Works great! Thank you for sharing👍

    I've tried making homemade biscuits several times and they never came out right. After watching this video they came out perfect. Turns out I was kneading them too much. I only had skim milk and because of the lockdown couldn't get whole but they were perfect anyway with just the right amount of sweet. Thank you Ken.

    Hi Ken, as an American (Texas) who now lives in England, I can tell you that these are NOT called scones by anyone but clueless Americans. The 'scone' resembles our 'biscuit' but it is VERY different in texture and taste. I love them both but they ARE different. Love your recipes and especially the way you talk us through a recipe. I usually have my English friends tune into you when they are just learning how we do things. Keep up the great work !!

    If you are in the UK, biscuits are nothing but scones ! but we normally eat them with jam/cream or something sweet, not eaten with savoury 'gravy'.

    @@cris241974 My mom grew up poor in the '30s and '40s, and she said that making gravy was a tasty way to eat the grease, so that it wouldn't go to waste. She said that growing up as poor as she did, with 7 siblings, it was difficult for everybody to get enough calories, and so not much was thrown away.

    Flaky Biscuits- Ken Click ( I typed the recipe for easy access. Hope this helps :) Link to Recipe Biscuits for Two Yield 4.5 Biscuits This is how to make great, flaky biscuits using ordinary All Purpose flour and whole milk. I hope you enjoy making them. Thanks for watching! Ingredients 1 cup AP flour (149 grams) 1 teaspoon sugar heaping 1 1/2 teaspoon baking powder 1/4 teaspoon salt 3 tablespoons cold, regular, salted butter (39 grams) A little less than 1/2 cup of whole milk (100 grams) Instructions Preheat oven to 425 F (218 C) 1 In a bowl combine Flour, Baking Powder, Sugar, Salt. Whisk Together Dry Ingredients 2 Cut butter into small pieces. Then place the butter in the dry ingredients. 3 Squeeze with your hands the butter into dry ingredients to make small slivers 4 Make a well in the center to pour your milk into 5 Gently stir ingredients together. Don’t overwork the dough. Stir as little as possible. 6 Use hands once it reaches dough stage and Gently incorporate the rest of the dry ingredients into the dough. 7 Pour Flour on Wax Paper 8 Spread dough out on wax paper. 9 press out and Fold the dough over. Lightly pressing it down. If it sticks to your hand add flour. 10 Final press out and cut dough with flour covered cookie cutter. If extra flour is on the outside dust off flour. 11Bring together Scraps then make another biscuit until you have 4.5 biscuits 12 Place the Biscuits in a buttered pan and place them in an oven. 13 Bake at 425 F (218 C) for 10-12 minutes or until golden brown

    I love this video for so many reasons. The batch is small so it’s much more reality based instead of “instagram pretty”. He chose cheapest ingredients possible to make an amazing meal/food so it’s accessible. Even better he went into the “why”s of how biscuits work so you can really learn instead of just mimic.     @@patmartens4751I go. The secret is moisture. Just don’t flour them that way, don’t drown them in the flour. I think that’s like taking the air out of them and they collapse. Dust not drown.

    Add a little vinegar to the regular milk will turn it to buttermilk. You just have to let it sit for a few minutes while you're preparing the work area and the flour mix.

    Made a gem. Used half cup flower.made four biscuits, used self rising flour. Came out big and fluffy. Used all ingredients , self rising flour and no BS or BP..did not have to put my hands in the flour. That’s the best part.

    I forgot to add butter once making biscuits, so ended up spreading it over the mixture before folding it a few times, it really increased the height!

    If you make too many throw the extras in the freezer for later. They reheat in the microwave for about 12 to 30 seconds for a quick snack.

    Wow I just made these for my 95 yr old grandma and she loved them she's not able to cook anymore and I missed her biscuits so much I decided to find a recipe and make my own 😊
