Great point Matt! I also catch myself placating religious people, then feel disappointed with myself afterwards. My technique: I have my own catch phrase. Here’s what I tell people when faith or belief questions come toward me: “I don’t use the word ‘belief’ in my life. It’s not part of my vocabulary. There’s what I know, and what I don’t know yet. That’s how I work.” It has generated some interesting conversations, and it let’s me set the tone and control the dynamic of the conversation. My second technique: Rather than telling people I’m an atheist, I instead plant seeds over time. I steer every family conversation I can toward matters which I find really exciting: latest developments in science, technology, biology, neurology, medicine. Then I introduce issues like cognitive bias, global conflict based on religious or politics, and matters of logic and reason. People see my passion, sincerity, intellect, and curiosity. If a religious question comes up, then I will have already established my “brand” as non-threatening, open, and honest, having connected “what is new” and “what is scientific” with what is fun and exciting and will benefit us all. So you could say I’m reverse-poisoning the well!

Being in the UK I find it so hard picturing coming out as an atheist as being a problem in a 1st world country, it is not even a thing here unless I guess you are part of a religious family.

In Canada you can be legally fired from your job if they find out you're an atheist working in the publically-funded Catholic school system. If you're not Catholic you can also be denied admission to said schools. And if you live your personal life in a way the school deems doesn't go according to the tenets of their faith you can be fired if an employee and expelled if a student. Legally.

I wish. I'm in northwest MI...a transplant from the Detroit area. All I know is this is referred to the "Great White West" of Michigan...so none around here. But we do average about one church every 3-4 blocks. Which part of MI are you from?
