This time, a very soft mousse, biscuit, and crunchy chocolate Croquant make your mouth happy.
The two flavors of dark chocolate and white chocolate mousse are so good on their own.
However, I made the side to be beautiful.
So it was so beautiful without any special decorations.
Then, I made chocolate biscuits on a very soft mousse cake and spread chocolate Croquant on it.
Its crispy texture was the highlight.
But if the thickness is too thick,...
It's hard to cut the cake.
It should be moderately thin.
And in this cake recipe, the texture of the biscuits went much better than the sponge cake.

15ml = 1Tbsp
5ml = 1tsp
One egg (without shell) 53g
Heavy Cream (38% milk fat)
(Chocolate is minced, flour is before sieving)
● Cake finished size ( 15cm*7cm )
● Chocolate Biscuits
yolk 1
8 g muscovado sugar (2 tsp)
2ml vanilla extract
1 egg white
23g white sugar (2Tbsp)
25g cake flour ( 3 Tbsp )
5g cocoa powder ( 1tsp )
sugar powder
● Chocolate Croquant
30g milk chocolate ( 3 Tbsp )
15g Lotus spread ( 1 Tbsp )
(or Nutella)
Rice Croquant 20g ( 3 Tbsp )
20g chopped hazelnuts ( 2 Tbsp )
● Chocolate Mousse Cream
yolk 3
30g sugar ( 2 Tbsp + 1 tsp )
100g milk ( 1/3 cup + 1 Tbsp + 1 tsp)
110g heavy cream ( 1/3 cup + 2 Tbsp )
5 ml vanilla ( 1 tsp )
5g powdered gelatin (1tsp+1/2tsp)
25 g water ( 1 Tbsp + 2 tsp )
150g dark chocolate ( 1 cup )
150g white chocolate ( 1 cup )
Chocolate Liqueur 5ml ( 1tsp )
440g heavy cream (220g + 220g)
(220g= 3/4 cup +2 Tbsp + 2 tsp )
● For chocolate decoration
100 g dark chocolate

Wow, never thought of scooping out the sides for the crown look. If the top part was orange, it could pass for a Halloween cake. The chocolate part looks like spider legs. You made the decoration look so effortless. I would be told to keep piping chocolate lines and half of them would break. Would love to see some fancy bread recipes!
