The Christmas cake has arrived again.
When you think of Christmas cake... what kind of cake comes to mind?
It reminds me of “Bûche de Noël”.
Christmas is called Noël in France, and it is said to be derived from the Latin word Natalis. There are two origins of “Bûche de Noël”.
One is the theory that all the firewood left over from the previous year will be burned to create a New Year's dam,
There is a theory that poor lovers made wood chips (Buche de Noel) to convey their warmth, meaning that they gave each other firewood as a gift.
It is truly a heartwarming story.
This Christmas cake is made with buttercream topped with coffee ganache and salted caramel for a more special taste.
And the vanilla sponge is really soft.

237 ml = 1 cup
15ml = 1Tbsp
5ml = 1tsp
1 egg (without shell) 53g
Heavy Cream (38% milk fat)
(Chocolate is minced, flour is before sieving)
♥ Cake finished size
[Size: 18cm*5.5cm]
♥ Special Coffee Ganache
40g whipped cream (2Tbsp+2tsp)
2g Instant coffee (1tsp)
2ml vanilla extract
* Coffee Liqueur (Ho Chi Minh Coffee) 5ml (1tsp)
60g milk chocolate (1/3 cup + 1Tbsp)
* Hochominh Coffee liqueur
A refreshing and light coffee liqueur.
It is most suitable for making coffee syrup and is often used for making tiramisu.
You can substitute kahlua.
♥ Salted Caramel Butter Cream
65 g (1/3 cup) sugar
75g fresh cream (1/3 cup)
2 g (1/2 tsp) salt
4 yolks
50g water (3Tbsp+1tsp)
90g sugar (1/3 cup +1Tbsp+2tsp)
230g unsalted butter (1 cup + 1Tbsp)
♥ Fluffy Vanilla Cake
45g milk (3Tbsp)
35g vegetable oil (3Tbsp)
Vanilla extract 4ml
yolk 4
25g sugar (2Tbsp)
75g (1/2 cup) soft flour
1 g (1/4 tsp) baking powder
4 egg whites
65g sugar (1/4 cup + 1Tbsp)
♥ Coffee Syrup
75 g (1/3 cup) water
25g sugar (2Tbsp)
3g Instant coffee (1tsp)
5ml Coffee Liqueur (Ho Chi Minh Coffee) (1tsp)
♥ Cute Mushroom Meringue Cookies
140 g (35 g) egg whites
195g (48g) sugar
5ml Lemon juice (1ml)
5ml Vanilla Extract (1ml)
♥ 150g dark chocolate (1 cup)
sugar powder
