One of my most popular things I serve my guests at my UK BBQ School is my BBQ pork scratchings, cooked over hot coals until crispy and puffed up, I then season with a bbq dry rub and drizzle with maple syrup...

@@r1ckjones should be able to keep it on, do same technique to get crackling then move to indirect
