Jam-packed with goodness, this is a great dish to slam in the oven while you get on with something else. One tray of roast veg forms the ‘bulk’ of the curry; a second tray of sweet, roasted tomatoes forms the saucy element. Mix the two together and dinner’s done.

These 'Tasty' channel style short videos have taken over now but I know what you mean...I like the brevity but it lacks the charm.
I prefer seeing Hugh & Co. talking us through recipes. These short snappy things lack that personal touch.

A few unusual flavour combinations there, ginger and tomato, cinnamon and squash. Bet it all works though, must try it.

This is all fine and great, but what makes the River Cottage channel special is Hugh and the rest of the River Cottage bunch. Otherwise it's no different than those recipe videos on my Facebook dash.
So I'm guessing the tomatoes stay in the oven all the time the other tray is cooking? It isn't clear from the video!
