I've made these roasted carrots on multiple occasions. Honestly, the best recipe you're going to find
Made this as my contribution to Christmas dinner at friend's house - it was great! Used a mix of carrots with parsnips from our garden, because we had such a good harvest of parsnips. (Unfortunately cannot grow carrots because the voles eat them.) Now that I've seem a couple more of Hugh's recipes, definitely subscribing to this channel!
This is a brilliant dish Huge, you took roasted carrots to the next level!

Crispy edges tricky- needed a few minutes in the oven because the carrots were very thick girthwise
Thanks for the veg love!!!
This is good
Sooo good! :)
Nice cookbook ;)
I did this with some parsnips that I needed to use up.
Beautiful cooking. Even more British name.
Hugh! It's been a long time!
I no I’m 6 years late. But I’m watching this today because I totally messed mine up today.
When I roast my carrots I always cover with foil for the first 15 mins then remove foil for the last 15.. Comes out to the perfect roasted carrots... 425F cheers and Merry Christmas from Vancouver Canada.

Hi! It looks a good idea to me, what kind of foil are you using? aluminium or paper?

Aluminum foil :)
Hello! And thanks for the recipe. I have tried it out tonight, but I'm not sure how soft are the carrots suppose to be after roasting. Before cooking, they were pretty hard; did not have a lot of juice in them. Should I have added a little water so they will boil and soften a little before they'd roast? The flavors are pretty good fitting together, but if the carrots were suppose to be a little hard, are not really on my taste. I was expecting a texture more like pumpkin cooked in the oven. Thanks, and thumbs up!
English chefs are so cool
Jamie in 15 years time
I believe they call that a "rolling cut", common in Chinese cuisine. I have me a nice bag of carrots here, think I'm'a roast some up...

***** Yep, and they were tasty. Roasted carrots are great...
ive never wanted to eat veggies so bad in my life.
i often do that when i have lots of carrots left at home. the sesame seeds are just the icing on top.
I just finished making this and it was so DELICIOUS ..but i love carrots, i had to leave mines in for 20 min longer because i cut them too thick :s but at the end up if came out perfect. i just got my braces on 2 weeks ago so i can't really eat them :/ so i hate to suffer watching my finace finish eating them D: ANYWAY i finished having a piece of carrot with that sauce and I CAN'T WAIT to make them again!!
I don't care what time I am gonna make it 😎
Nice, handsome guy. Good job!

They really become nice and sweet if you cook them right. I don't like ovens but I get the same results from my stove and pan (though you'd have to pay attention to them all the time until done).

Can you substitute cranberries for the raisins?
Looks fantastic. But, the recipe is not on Jamie’s site as advertised.
Can we roaste potattos with the carrots at the same time?
Can I use dried cranberries instead of raisins?
Can you replace almonds with pine nuts? I don't have almonds

Rape-seed, it's a Monsanto thing™
@IanLoughead

Search Google for Rapeseed. And yes, in North America we call it Canola (which is just a marketing name meaning - Canada Oil). Rapeseed is a member of the mustard family and long predates Monsanto (who have their hands in all sorts of plants). It is likely that Hugh is using organic rapeseed oil which would be Non GMO. It has a higher cooking/smoking temp than Olive oil, so is better for roasting and frying.
Where was the honey???
Where is the honey in this?
it is look very good! but i am not agree with cook the honey! the honey will become suger after high heat, replace with maple syrup will much better!
