Roasted sprouts are a great way to convince more people to eat them. Delicious with chorizo. Try it, you won't regret it!
INGREDIENTS:
Stem of Sprouts
200g Chorizo
Handful of Fresh Thyme
2 Cloves of Garlic
Olive Oil
100g Skinned Hazelnuts
Salt Pepper
Lemon Juice

    Great recipe, great chef is Gill he's gt far more about him and better to watch than a lot of these "tv chefs" Always making the vegetables the centrepiece rather than just pushed to the side of the plate

    Did this for Christmas. It's a winner. Doing again for new year going to slice the chorizo a little bigger this time.

    oh I love the sound of this! I might surprise my sprout loving household with this over the holidays, I am a very very recent convert to sprouts thanks to my hubby's recipe (bacon, garlic, butter & .... maple syrup!) so this would be a victory for him i think!

    Oh my giddy aunt, they look delicious! I love brussel sprouts, I even love them raw too. It's nearly impossible to give me control of preparing the brussels at Christmas because it ends up being a "One for me, one for the table" kind of scenario, lol. Great recipe. Lee x

    Don't like brussels sprouts, however I liked them as a child, my mom used to grow them just because of me. But lately reading about how amazingly healthy they are, so will include them in my cooking. This recipe looks like a lovely way to start doing it. Looks so delicious!

    Oh this recipe looks amazing. I tried the sprouts and chorizo salad from Bondhi Harvest, and i'll definitely give this one a go. I like having sprout doubters around, just means more sprouts for me :)

    Here is another suggestion that you guys might like . Cannot get hazels. I substituted chestnuts. If can get fresh, by all means. I use dried Italian or Chinese from Soho grocers. Soak chestnuts overnight in water to cover. Next day poach in water,halve glass white wine. chicken stock ( Waitrose is best. Otherwise, Swansons under the Cambell label. If i can get it in Malaysia, there is no excuse. Bung soaked chestnuts into pot with wine etc. poach until al dente. dash of soy sauce works. Mix with sprouts . Reduce cooking liquid as sauce. Add some chicken stock if too dry. Thicken with butter and a little arrowroot/cornflour solution.

    Looks good Gill ..I normally fry them in olive oil mixed with smoked bacon pieces.This year think I will give your way a go! Before last year used to just boil them to death uggg! and thought "what a boring veg" .....not any more

    I could not agree more. Thanks to Hugh, Gill and others, no more sprouts boiled to death in salted water. If its Chrismas, extra knob ob butter. Roasted Sprouts? Yes, yes,yes or au gratin. Anyone interested in a vegetarian terrine featuring sprouts? Pls leave a comment. Will revert.

    I will be making this for the second time tonight. :) :D It is a great recipe. I will substitute the nuts with roasted chick peas due to nut allergies. :)

    Here is Richard Olney's recipe for sprouts au gratin for what it is worth. WARNING : Its from Memory!! Sprouts, enough for 4 persons allowing for 6 each. 2x rashers streaky bacon (green, not smoked clove garlic, chopped double /shipping cream (enough to come up to 1/2 the height of the sprouts ( dont drown them) Gruyere cheese/strong cheddar grated 1.) Use medium sprouts.( Avoid monsters ) Blanch in lightly salted water for no more than 3-4 mins. Refreash in cold water. Drain, set aside. When cold, halve them. Set aside. 2) Dry fry the bacon in a non-stick pan until crisp, or grill. Chop bacon or crumble. 3) Mix bacon with sprouts and put in an enameled heavy cast iron dish which has been greased . (Le Cruset is best) 4) pour on the cream.Dot with grated cheese 5) Into pre-heated oven 180-200C, 20-25 mins until lightly browned.. 6) A pinch of nutmeg would go nicely. This recipe is now in the public domain so no worries, but please acknowledge its origins.

    Dear Mr. Meller, Bravo! Tried the recipe with American chorizo( cant get the Spanish ones) to compensate, I use some chopped Chinese Lap Cheong which is as near as damnit. Works. I also use pistachios as I cany get hazels. Your recipe minds me of one which ranked as one of the most expensive in the world. Once upon a time an American food writer by the name of James(?) Nelson plagiarized a recipe for brussels sprouts au gratin from Richard Olney's classic "French Provincial Cooking. Mr Olney sued and settled for USD 1 million.

    Hey Gill. You said the hazelnuts were optionel, but I was thinking if they could be replaced by something else. I wanna serve this dish for a person, who is allergic you see. :) And I just really want a last thing

    Sprouts, ya, ya , good! But will it cost more given they are Belgian (Brussels} and UK now Brexit?
