    Some people were asking about quantities as a recipe doesn't seem available. I made mine with approx equal quantities, (volume rather than weight), of Celery, red Onion and Mushrooms. All which when fried down with the Sage came to about the same volume as the Squash and Breadcrumbs. Add to the mixture about a dozen chopped Dates, some flat leaved Parsley and an Egg.

    I just made this for a dish to pass Yesterday for the family on Christmas They didn't have Chestnut Mushrooms,so I used Button Mushrooms as a sub and needless to say I Highly Recommend this dish to anyone wondering how it will turn out.It was gone quick and many in my family said it was the best stuffing they ever had in their life.

    wow, dates must really add a glorious new level of flavour to that stuffing! Medjool are as addictive as candies, I love them!

    Basic Bread Stuffing. Throughout the year keep any old bread and make it into breadcrumbs then freeze until needed. In a bowl combine :- Breadcrumbs An onion (not softened) chopped finely Dried Mixed Herbs 1-2 beaten eggs (depending how much you are making. I tend to use two medium) Salt and Pepper. Mix well. Bung it into a ovenproof dish and press down. Pop small cubes of butter on top. Use foil for the first 10 mins then uncover for the remaining 10 mins. Cook at 160F Fan (work out your settings from this). That's my basic recipe and I tend to add things like grated apple or nuts to make it interesting. But this is the stuffing recipe I've had all my life and its really tasty.

    so can someone explain what stuffing is and what it's for? I'd call that meal 'diced and baked vegetables'. I've seen stuffing that you put in the turkey but I don't get that idea either.

    it's a side dish for poultry and can be cooked in the turkey or separate from the turkey like this dish. Looks yummy might have to try this one soon.

    Stuffing is a pretty ambiguous dish. It is usually made of some combination of bread, vegetables and pork sausage. The idea is that you put it inside a roast bird and the stuffing will flavor the bird and absorb its excess juices. You can also cook it separately from the bird, though I believe that is technically called a dressing. Not 100% sure about that though.

    Thanks for a great stuffing idea... nicely presented, I will replace the egg with ground flax seed to make it 100% Vegan. unfortunately using any animal product till supports animal cruelty... google egg production and the dairy industry.

    I buy eggs from a couple of guys who keep their own very spoiled and happy hens. "Free range" is not a legal term; it's a commercial lie. Their girls really are free range. They have the run of the back yard, grass and bugs to eat, and a dirt pile to roll in. The yolks are bright orange, indicating high B vitamins from eating fresh greens. Never buy eggs from a grocery store unless you have seen the local yard and hen house.

    Yup we are supposed to know what temperature it is when you say medium to hot oven..........cant you just tell us more properly??

    It doesn't really matter all that much with these kind of things. Baking, sure it's important but for this not so much. I would say 225 degrees Celsius seems about right.

    +C. P. Rectem Eggs are vegetarian, but not vegan. Anyways, they make 'Vegg' now that tastes just like eggs.
