Chinese and english recipe/ instructions below :
材料: 完成湯種大約 75 - 77 克 = 2, 646 - 2, 716 oz 湯種. ( 將用在大約 250 克 = 8, 818 oz, 高筋麵粉內 )
1. 75 ml = 2, 536 fl oz, 水
2. 15 克 = 0, 5291 oz, 高筋麵粉, 德國我用 Diamant weizen mehl " Extra" Type 405
Ingredients: finished around 75 - 77 grams = 2, 646 - 2, 716 oz, tong zhong ( this portion is for around 250 grams = 8, 818 oz, high-gluten flour )
1. 75 ml = 2, 536 fl oz, water
2. 15 grams = 0, 5291 oz, high-gluten flour, in Germany I use diamant weizen mehl " Extra" Type 405

Tang zhong is an extremely good method to achieve soft fluffy texture in bread without chemicals. Love it

Thank you. I use Tong zhong make cocktail buns and the next video Lau sa bao/ Egg custard bun. Tong zhong help the bun or bao soft fluffy texture and tasty. Please try it. Have a lovely day :)

您好, 聽說食譜中的濕材料 ( 如蛋, 牛奶等). 乾材料 ( 如麵粉, 奶粉等 ), 合共的份量加在一起, 把總數 x 20 %, 就是需要的湯種份量, 據說湯種不能超過 25 %. 發揮湯種法有很多不同方式, 湯種佔總麵團的份量, 會影響做出來的麵飽質感的分別, 要靠經驗做出自己喜歡的麵飽口感, 用這個 20 %的份量計算法, 1 份高筋麵粉要 5 份水, 希望能回答您的問題, 祝快樂 :)

Hi, in Germany I use diamant weizen mehl " Extra" Type 405. I buy in Kaufland supermarket. Have a lovely day :)
