Good evening, great video. Know I saw a video at some point that you mentioned a seal of some kind you use in the smoke stack to keep the smoke going only up the smoke stack not around it where it is loose and stops the drip. What is the seal you are using?

Def tasty. Not as much meat, but a nice treat with a completely different taste. 🍻
Iberico ribs taste great and all but they lack actual meat big time. I much prefer a meaty Berkshire pork sparerib

Thanks. No I cut close to the bone on both sides, wasn’t a lot to chew and the bones didn’t pull back and much, but they were cooked well. 🍻
Looks like a lot of shiners. But they are butchering to get the most belly they can for the premium price. Looks delicious either way. Nice work.
