I learned this trick (marinating liver in milk overnight) in the 1970s. When I told people about it, most of them would go "ew, liver" but I took it to pot lucks and my body-builder friends loved it. Liver is great; I'm glad it's making a come back, especially now since I'm basically on keto.

Nice recipe. I also like the vinegar (I use balsamic) but any wine vinegar cuts through the fattiness nicely. I'm from Gloucestershire in England, it's the southern neighbour of Worcestershire. We pronounce Gloucester / Gloucestershire "Gloster" and "Glostersher" respectively, (or Glostersheer, but never Glostershire). Likewise, Worcestershire = "Woostersher ". Only the Americans call the sauce Worcestershire Sauce. We call it Wooster Sauce, irrespective of what it says on the bottle 😅 (Don't be misled by your American viewers, the other chap from the UK also got it right😊).

Thank you for mentioning Balsamic vinegar~ Great idea. My dad is from London & he intoduced my 🇨🇦 mom to British condiments like Worcestershire sauce, H.P. Sauce, Mint Jelly, et cetera…I use only the authentic brands from U.K. as the generic knock offs in Canada couldn’t possibly taste the same & why be dissapoinnted. Yes, the U.K. Brands cost more, but some things I will NOT sacrifice. Cheers.

Organ meats ARE where the most dense vitamins & minerals are found. Pass historical generations feasted upon Organ meats. The heart, liver, Kidneys, all the parts of the endocrine system were highly valued As a food source. Because of the strong gamey taste many times these meats were made into sausage, or blended with muscle meats which are lower nutritional quality but having milder taste.

Can’t wait to try this I bought some lambs liver today after reading how good organ meat is for our health. Organ supplements are very expensive so I thought I’d try and eat it first. My mum used to make liver and onions but me and my siblings hated it because she over cooked it and it crumbled when you cut it, so dry 😂😂😂😂

Hope you like it! The meat is the fraction of the price of the supplements and way more nutritious!

Asparagus goes really well with liver and onions too. I lay out the spears on a microwaveable plate and add a pinch of salt and a bold Italian dressing. Microwave for 2 minutes, or till just tender.

Liver is one of the most tender parts of an animal. Do you really need to tenderise it? I never have. My granny could eat liver, even with her lack of teeth. Are you eating it with a straw?

We like adding mushrooms to the liver & onions and make a thicker gravy. I used to hate liver but then when I was pregnant with my 1st child I suddenly was craving it. Sometimes I’d eat it a couple of times a week. I would put in inside a rolls and eat it like that sometimes. It was crazy to me but I couldn’t stop craving it. Also Chicken livers. ❤

Thank goodness you did not promote cooking liver "n onions with ketchup! 😂🤣 Goodness was that a 50's/60's thing and horrible! My mom loved cooking liver steaks in the broiler with garlic and soy sauce, served over sticky rice and topped with green onions. I loved it and thank goodness because I was ordered to eat liver when I feel anemic as a young adult. Your recipe, with garlic, onions and the beef stock looks fantastic....and served over sticky rice, I'm going to try it! 🥰😎

I have seen chicken liver recipes and the southern cooks use buttermilk soak from 30 minutes to overnight time periods. The 30 minute counter soak worked good for 2 lbs of chicken livers to tame/tone down the strong bite. I know this is beef liver, but organ meat is organ meat. Make sure the bile duct is removed, I found some processed liver with the green sack still attached. Thanks for the simple ingredient recipe.
