Making Julia Child's Liver and Onions

This dish is based on the master recipe for a simple sauté of calf's liver. Because the liver is first sautéed and then then basted with browned onion, it is exposed to heat for a longer period of time. It is important to ensure that the liver is not overcooked. When the liver is cooked with caution and respect, this dish can become a perennial family favorite.
