Dumplings are a staple food in Chinese cuisine, and making them is a fun and rewarding process. INGREDIENTS
400g / 14oz / of wheat flour (at least 10% protein content) (Amazon Link - geni.us/-bread-flour)
200g / 7oz / of water
1/2 tsp of salt
INGREDIENTS FOR THE FILLING
400 grams (14oz) of ground chicken
150 grams (5.3oz) of spinach
1.5 tbsp of soy sauce (Amazon Link - geni.us/light-soy-sauce)
1.5 tbsp of oyster sauce (Amazon Link - geni.us/oyster-sauce)
1/4 tsp of salt
1 tbsp of sesame oil (Amazon Link - geni.us/roasted-sesame-oil)
1 tsp of chicken bullion powder, optional (Amazon Link - geni.us/chicken-bouillon)
1 tsp of five-spice powder (Amazon Link - geni.us/five-spice-powder)
20 grams (1/3 cup) of diced basil, can be replaced diced scallion
60 grams (1/4 cup) of chicken stock (Amazon Link - geni.us/chicken-stock)
INGREDIENTS FOR THE DIPPING SAUCE
2 cloves of garlic, grated
1 tsp of grated ginger
2 tbsp of diced scallions
1 tbsp of chili flake (Amazon Link - geni.us/chili-flake)
3 tbsp of oil
3 tbsp of soy sauce (Amazon Link - geni.us/light-soy-sauce)
1 tbsp of Chinese black vinegar (Amazon Link - geni.us/chinese-black-vinegar)

    Another excellent lesson. I use cool water for boiled dumplings but hot water if the the dumplings are only steamed or pan-fried & steamed. This ensures that the flour is fully cooked since the heat transfer rate is much slower for steam than for boiling water.

    Up here in Canada, we can buy chicken and cilantro dumplings so that would work as a greens substitute as well. I like to use wild greens from the property. Lamb's quarters/Chenopodium is my favorite. ☺

    Hi! Today i did my first attemp to cook homemade dumpligs following your recipe... I failed miserabilly, my doung was too sticky, i added more flour but also, i thinked it would be much more easy to make the closing for the dumlings, the "repulgue" as spanish speakers usually call to the closing finishing of the dumpling, or "empanadilla"... All that i've stated was my fault but has been a funny first approach to the recipe! so thank you very much! I'll enjoy improving my style ;)

    It also depends on where you live like if you live in Arizona and in the western state you will need a little more water, if you live in an area where it's more west you will need less water. I hope that this helps also living in the upper states the flower will need more or less water.

    I made a vegetarian version of this using minced mock meat as my family don't eat meat ...it tastes just as good ! Yummilicious 😋🤤😋好吃!
