Garaeddeok (long cylinder shaped rice cake: 가래떡)

Тәжірибелік нұсқаулар және стиль

www.maangchi.com/recipe/garaed...
Ingredients:
2 cups of short grain rice flour
½ ts salt
¾ cup of boiling water if using a microwave, 1 cup of boiling water if using a steamer
1 ts sesame oil* If you want to make your own homemade rice flour, check this out.
Directions:
Making rice cake with a microwave:
Combine the rice flour, salt, and boiling water in a bowl.
Cover it with plastic wrap, leaving a small gap to let the steam release. Microwave for 2 minutes.
Mix the rice cake dough with a rice scoop or wooden spoon.
Re-cover with the plastic wrap and cook for another 2 minutes.
Spread ½ ts sesame oil on your cutting board. Put the hot rice cake in the oily spot on the cutting board. Pound it with a pestle for about 5 minutes, until it becomes smooth and elastic.
Making rice cake with a steamer:
Combine the rice flour, salt, and boiling water in a bowl.
Line a steamer rack with parchment paper. Add the rice cake dough and steam for about 25 minutes over hight heat.
Spread ½ ts sesame oil on your cutting board. Put the hot rice cake in the oily spot on the cutting board. Pound it with a pestle for about 5 minutes, until it becomes smooth and elastic. The rest of process is the same as the method of using a microwave oven.
Prepare the rice cake for ddeokbokki:
Cut it into 8 equal pieces, then roll each piece out into a 4 inch long cylinder shaped rice cake.
Put ½ ts sesame oil onto your hands and gently rub the rice cakes to coat them in a thin sheen of oil. This will give them a nice flavor and keep them from sticking to each other.
Prepare the rice cake for ddeokguk (rice cake soup):
Cut it into 2 equal pieces, then roll each piece out into two 10 inch long cylinder shaped rice cakes.
Let them cool at room temperature for several hours, then slice diagonally into thin discs.
Use right away, or put in a plastic bag and freeze for later use. This amount is for 1 serving of ddeokguk, so if you want to make two bowls of soup, make two batches.

I just made this rice cake using the steaming method. But instead of short grain rice flour I used plain rice flour and added the 1 cup boiling water and and a couple of tbsp. and about 1/4 cup of glutinous rice flour to get the chewy and soft texture. Then I let mine steam for about 30-35 minutes until the rice is cooked through and after it I pound it while it's still hot and shape them as I like. So far my rice cake turned out great. They're soft, a bit chewy which should be and they don't break that easily because you have made it correctly. Your recipe by far maangchi is the best upon all rice cake videos. Thank you very much. Hope you'll notice my message.

I just made this today and it turned out amazing!! Soft and chewy I read in the comment that frozen flour is better but I’ve never seen it where I live so I just went ahead and made mine with the normal rice flour. I started with only 50sec in the microwave and it turned out almost hard! I was already panicking but I added a little more water into the dough. I also decided not to put it back to the microwave because of the hard texture. I continued pounding it rightaway for about 5mins. At first, I was hesitant about the hard and almost crumbly texture, but then it got better after 3mins of pounding. I made it into a ball and surprised that the dough texture became really smooth😂 Tip: Don’t put it too long in the microwave and don’t panic if the texture doesn’t turn out like how it’s shown in the video. You can always improvise and do the recipe your way💪🏻 Thank you Maangchi for the recipe! I didn’t know that making topokki at home could be this simple😊

For those asking about using plain rice flour, I used the steaming method (seen in her recipe) and used about 1 and 3/4 cup water (recipe only calls for 1 cup). You can adjust the amount of water needed I just approximated it until I reached the consistency seen in the video. Make sure that there is no dry flour left and it is sticky and heavy. I hope this helps!

maangchi! I tried it and it took some time. when i took it out of the oven it was not sticky at all, but then after massaging it for quite some time... i mean 1 hour, i finally made a role and cut it into cylinder. Me and my mom ate it with cheese and it was really delicious! hard work always pays off! fighting!

I have been trying to make it since 2017, always failing, I never succeeded, but today I made it and it finally succeeded. I always buy rice flour to make it, but it did not succeed. I tried grinding Korean rice and it did not work. I also tried all methods on KZread, whether with steam or microwave, and today I succeeded by using the microwave😍😍😍😍😍😍

For anyone out there struggling with sticky plain rice flour, I have some tips. I played around with the ingredients a bit and this is what I did for it to work: (I made this without short grain rice flour) 1. You have to use more water. For 2 cups of plain rice flour I used around 1 and 1/2 cups of water and after that I kept slowly adding more by monitoring the concistency and trying to get it to look like Maangchi's. 2. This is the most important thing to do. Use a loooot more sesame oil. Once you get to the pounding part you will notice that the more you pound the stickier your dough will become. What you have to do is everytime you have dough sticking to your hand you add an additional drop of sesame oil to your cutting board. This helps the dough become less sticky. Do this everytime you notice your dough is getting too sticky.

If only I saw ur comment before I started.. lol. I also used rice flour , n kept adding water to get right consistency that I saw in the videos.. n had to place it more time in the microwave to steam properly. N yes lots more oil.. but I did notice when I let it cool down n then pounded n kneeled, it came out better. Kneeled in smaller batches, so was easier. Going to test it out and make toekbokkie tonight. Wish me luck. Hope it came out right. Will update after I make my toekbokkie

I made rice flour myself in the home , it was sooo easy , because we don't have korean grocery store in my country , and the rice flour isn't available , so i made it myself and i crushed the rice with my grandmothers mill , thanks maangchi for the recipe 💜

hi Maangchi! I just want to tell you that I've tried this recipe for about 2-3 times and it always works. really easy, and you explained it really well. I live in Indonesia, and since there are no korean grocery store in my city, so I just use rice flour that I can find in my local grocery store. I don't if it's glutinous or short grain (the label doesn't say anything), but it works. at first, it will stick and hard to be stirred and pounded. I thought I've failed, but as I keep adding more sesame oil, it's starting to be better and get in shape. so thank you for the recipe! I always enjoy all your recipes! 💖

Mei Lau not really chewy, it was soft instead. It can be more chewy with longer pounding. I steam it for exactly the same maangchi told us, but sometimes longer if it needed.

hi Maangchi! I just want you to know that my 1st try of making rice cake is very successful and I'm very happy! thank you so much! it's extremely easy! I really didn't want to make at first because I could see a lot of people failed but I just followed my heart and watched and listened to this video! I had a little problem at first because when I mixed the bioiling water in my 2 cups of rice its still very dry and couldn't make a dough, I was very upset at first. I didn't put it in the microwave yet because you said it has to be a dough 1st before putting in a microwave. So I put another 3/4 cup of boiling water and to my surprise it was finally turning into a dough! I'm just so happy maangchi because I love gochujang so much I bought 2 kls of it and just love adding them to almost all of my dishes! I didn't have a short grain rice powder however it was a denorado rice from our local market, it is sticky when it is cooked but it's not a glutinous rice, it is quite similar with Japanese rice. I had it grounded to powder from the store where I bought it and it only cost like 1 USD for 1 kl. I did pound it a lot like you said it was very tiring plus the rolling too 😂 it taste almost similar to mochi! and I also tried with the honey I also just in the local market and it taste absolutely heaven! thank you so much Maangchi! love from Philippines
