    In India, we don't have this kind of cabbage. What do you guys suggest as an alternative to this? Can we use normal patta gobhi instead? Does it taste the same?

    @@Maangchi Yipeeee! I'm so glad Cute Maangchi read me. Btw, this is the third year I'm making Kimchi The Maangchi way! Winters are the only time we get Napa cabbage so all year round I keep waiting for it to appear in the veg market so that I can buy them n quickly make some for myself! I crave for Kimchi 😄🤤

    @@DShree28 No , I used Napa cabbage. In my local market they call it Chinese cabbage 🥬 some even call it lettuce 😂😂😂

    @@Rsd_13 I think you get it at Big Basket. Although a bit expensive. But I don't know how this recipe would taste with the cabbage we get here 😅

    @@Rsd_13 Hi Rita, you can totally make Kimchi with regular cabbage, also Mooli (White Radish) Carrot, Green Beans, Turnip many veggies. Look it up! ; )

    Hello! I want to encourage everyone to try this recipe even if they don't have access to some ingredients. In Romania this cabbage and radishes are very hard to find or very very expensive. I used regular cabbage, apple and celery stalks. One time i used leak instead of green onions and it still was so so delicious. A year ago I didn't know what kimchi is and now is always in my fridge. Thank you Maangchi for this wonderful recipe! 😘

    @@dhwanisingh179 yes. I did use red chilli powder but as we eat less spicy recipe I used half the quantity than she uses and that too of Kashmiri chillis. Thanks.

    I made this step for step and it was "just ok" when I tasted it. HOWEVER now its been two days and its the most delicious vegetarian kimchi Ive ever tasted! 😋 yum! Thank you so much for sharing this! ❤️

    Tip for Indians : guys we can use tikhalal chilli powder instead of hot pepper flakes we can use normal cabbage instead of nappa cabbage these are approved by some koreans who live in india

    Thanks for the tip. I have a silly question, but will take a chance and ask you anyways- is there a substitute for cabbage too? My family likes spicy stuff but cabbage is a no-no here. I love kimchi, but can't make it just for myself. Tried making it with lettuce but it was a disaster.

    @@sukritidang u can make em with just vegetables she mentioned except cabbage and there are so many videos in youtube too but cabbage is the key point if kimchi na but try using some kind of leafy vegetables and try ur best :)

    This recipe is pure gold. Using regular rice flour works perfectly. I ferment at room temperature for 2 to 3 days using a Kefirko vegetable fermenter and another with a glass weight to press the kimchi down and a one way air valve. Making the vegetable stock yourself as per Maanchi recipe more or less is a go to move for this. Can’t keep enough it disappears from the fridge! THANK YOU!

    Daniel, not everyone has time to make stock from scratch. I use th brand "Better Than Buillion Sodium Reduced Vegetable Base." It's really delicious. It's sold at all your chain grocery stores, and even at Costco. I use it to boost umami in vegetarian recipes, and it also makes a satisfying hot beverage. It lasts forever in the fridge.

    @@preethijohn5699 I used Kashmir red chilli powder and it tastes very yummy... Kashmiri red chilli powder tastes very similar to guchugaru... Or you can order guchugaru online from Amazon.

    (This for my personal use but you can use it too! :) Recipe: 3 pound cabage Six tabblespoon salt (kimchi sauce recipe) 2 tbsp glutinous rice flour 1 cup vegetable stock 1 tbsp sugar (Other vegetables) Radish 6 green onion Buchu(optional) 1/4 cup carrot (kimchi sauce again) 9 clove garlic 1 medium onion 1 tsp peeled ginger 1/3 vegetable stoch 1 tsp sugar 3 tbsp salt 1 cup gochugaru

    My wife is Filipino, I'm Canadian, and we both love Korean cooking and flavours. The only problem is- I've been vegetarian most of my life so that can be a struggle with Asian cuisines as they tend to be heavy on the meat. I just made this recipe tonight and it is SO good. Thank you Maangchi for thinking of us veggie-lovers!

    Most asian culture (except certain colder mountainous region and Philippines) actually involves vegetarianism/veganism to a certain degree. Common seasoning usually includes soy sauce, soy bean paste/spicy bean paste in place of fish and oyster sauce. Things like garlic, chives, onions, spring onion and similar family are usually not eaten in Asia's definition of vegetarianism (except Indian vegetarian), however. You can try to google for Chinese, Japanese, Indian and Thai vegetarian ideas. It is rather big in these few cultures (religious reasons). Or you can find vegetarian substitute e.g. mushroom soy sauce for fish sauce/anchovies when looking through Maangchi's videos!

    OMGGGG this is so GOOD!! I loved how you explained everything especially measurements as well as what you used and how you did it without too much editing. Most people try to do fancy editing but the raw videos is what helps people learn the most. 10/10 vegetarian kimchi

    @@chandrakalabuddha6267 1. I use Chinese cabbage. 2. Yes normal red chili powder but you must know, Masaana a city in Rajasthan grow chilli organically so i have used that. 3. No fish sauce 4. Yes i made vegetable stock and use in the kimchi.

    I’ve tried just about every store made Kimchi-and hated them all. So, I made your recipe 3 days ago. It has sat out on the counter for past 3 days (house smells like cabbage and garlic-yummm) and this morning I put it in the refrigerator. It tasted good this morning, but needs a little more time.     @@user-ei3uk1bc9p It's easy to make, just save the ends of vegetables like carrots, onions, ginger, celery and then boil them all together for 30-60 minutes and strain. There is your veggie stock.

    i typically use the easy recipe and substitute soy sauce for the fish sauce etc (just in case my dad wants some, he's vegetarian). i love that recipe, but i think i'll be trying this one of the next times i make kimchi! thank you so much for all the time you've taken to put these together for us all

    It just starts with having a great knife, such as the Wusthof Classic Chef's Knife. Seriously, if you are dead broke and have a crappy cutting board, frying pan, pot, oven, etc...a quality chef's knife would still be a requirement.

    I'm not Korean, but I love Korean food and make a Korean dish at least one meal a day and I realized that I'm missing the main part that is Kimchi. I looked all over for a vegetarian recipe but couldn't find one that was convenient enough. This recipe was not only easy but absolutely delicious.     hi maangchi! i made this about 2 weeks ago and at first i was a little nervous (because i accidentally added a little too much salt) but it turned out fantastic! it was so yummy and it tasted almost exactly like the traditional kimchi. i even made kimchi jjigae with it and it was so good i'm contemplating my own kimchi again 🤣 i'm not vegetarian/vegan but i don't have saeu jeot so this recipe is great because it has easily found ingredients. i also made some substitutions (don't have daikon so skipped it; don't have gochugaru so used chilli flakes; and don't have vegetable stock so used chicken stock) and it still turned out amazing. a very versatile recipe to make 👏🏼 thanks maangchi!

    Because of maangchi, I started making my own kimchi years ago! I’m a pescatarian now, but I was a vegetarian at the time. One thing that I’d recommend adding, if you’re looking for a flavor that still includes that sort of briny, sea-related flavor is dried seaweed! I used Japanese Hijiki. Basically like strips of konbu/dashima that are still dried and sort of tiny and shriveled up. They absorb some of the kimchi juice and give their savory flavor back in return! Super delicious. Thank you for inspiring so many of us to explore and enjoy korean food, maangchi! I never would have found out how much I love it without you.

    Try something called HING. It's made fromthe resin if the asafetida plant, and for people who can't eat garlic for religious or dietary reasons, hing takes garlic's place quite nicely. It's an Indian spice, but it works anywhere garlic is called for, like kimchi. It isn't rajassic, (stimulating) as garlic and onions are.

    👋🏻 Hi! Whenever I watch Maangchi cooking, it makes me happier and happier. Authentic and Legit Korean food!👍🏻. She is not definitely making it for just filming. Maangchi is making it by heart. I can feel it, because I’m a chef from Korea as well. Also, I upload the cooking and eating clips. And I wish I could cook Korean food with Maangchi, One day 😋

    This is my second batch with this recipe. First batch was 3 lbs. Today’s batch is 9 lbs because everyone wanted me to make them some. Everyone said this is the best kimchi they ever had, and I have kimchi aficionados as friends. I hope I didn’t mess it up.

    I was feeling super grumpy and sad yestreday so I decided I was gonna make kimchi today. It was a lot of labor (especially since I had to pulverize the onions garlic and ginger by hand 😭😭) but the result was so good!!! I have missed kimchi so much since store bought in my area just isn't the same as a homemade or restaurant made kimchi. I have a bunch in my fridge and a fresh bowl in front of me and I'm so happy now :)
