I made this back in April with green onions from my garden. It is absolutely spectacular. I've been enjoying it for almost 2 months now and it just keeps getting better. It's my favorite kimchi by far and it's so easy to make. 😊

Thank you so much taking time to share your good memory of friend. It really touched me what you said. Our lives go on and we cannot control it as we wish and sometimes lost contact with friends but still think about them. I am from Japan and have lived in the U.S for 25 years. There are friends I wish we still talk in Japan but I lost contact with them. I was really able to relate to what you shared. I really love your cooking and hearing your memories and experiences. If any of you have access to the thinner "tree onions" or "Egyptian onions"(Allium × proliferum, known as 쪽파/jjokpa in Korean), you can use that instead (cutting isn't necessary in that case). Tree onions are the standard type of green onions used for pa-kimchi in Korea. However, this type which uses "Welsh onions"(대파/daepa) has also become popular in the recent years, especially after Kim Soo-mi showcased a recipe using daepa.
