Pad thai made from scratch isn't exactly a quick meal-there's a LOT of ingredients to prep. But how do restaurants get your freshly-made pad thai done in 5 minutes? Good news: they're not doing anything you can't do at home! So watch the video and I'll show you all the restaurant hacks you can follow so that you too can have pad thai on a Tuesday night in 5 minutes!

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZread channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZread videos, her cookbook, and cooking classes. I’m the chef and owner of a Thai restaurant. It’s a cute way to make pud thai. Not the fastest way when you have hundreds of orders to do tho. Usually I cook the egg first, then I put the protein, then noodles. I blanch the noodles before hand so noodles cook super fast. I put a few spices in the noodles once cooked up and then some pud thai sauce and then I stir to make it sticky and the tamarind sauce thickand I carmelize noodles. I would add a little peparika to give it that red iconic pud thai Color. Lol. Pud Thai needs to take 3 minutes top when making the dish. The way you do it is cute. 😬 Also you don’t need palm sugar. That’s way to pricy. Just use regular sugar, vinegar, and tamarind and fish sauce. Our pud thai won first in the city 🏙. So we have a good recipe. Also when you make pud thai… make it SAUCY. People love a saucy Dish. Put a little pud thai sauce first. Cook until noodle soaks it. Do it three times. And then stir on residual to thicken sauce or make sticky.

First, thanks for sharing this recipe. Second, can I use firm tofu in place of pressed tofu ?

@@tdhtran yes. But when you put tofu in it burns very fast. So put on low heat. Also I usually cook my tofu before I put it in. So it’s already cooked mostly. Then it’s mostly just about warming up the tofu. However most importantly just squeeze all the water out. You want the tofu to be dry when you put it in. Very important. Hopefully that helps.
I want to thank you for leaving your “mistakes” in and laughing at yourself. As someone who’s super hard on herself, you model self-compassion for me. I love cooking but sometimes I stress out too much when things go wrong and it becomes a negative experience. I hope I can learn to laugh at the mistakes a bit more. :)

start throwing things together then at random without recipes....if it tastes good eat it...if it doesn't then it wasn't a failure it was just an assurance that you don't like whatever it is that way always just be open to trying new stuff because you never know which one ingredient was the game changer for a dish
The little "voices" of the pot and the tamarind juice and all the things you cook with in the text overlays is the greatest thing ever. It is so genuine and I love that it shares the joy of cooking and the whole process. Love your channel!

Super random compliment, but I freaking love that in the written recipe at the end of each section of written instructions you also put the quantity of whatever is needed so I don’t have to scroll back to the top. That is insanely helpful and I haven’t really seen recipes do that. Just wanted to say that is much appreciated :)
No joke but the best Pad Thai I've ever had in Thailand was from a campus canteen in Mahidol University. And the way the cook made the Pad Thai was exactly like yours. So, very happy to finally find out her secret.
I made Pad Thai for the first time from your previous recipe…so good. Your stir fry recipes have been my bf’s favorite for a year, but he said that he liked the Pad Thai even more. (The only Thai or asian food he has ever had is what I have made for him.) I really cannot thank you enough for these videos…all the recipes I have tried are perfect.

This makes a lot of sense, Thai food is such a culinary gateway- Thai food might be the most interesting food on this earth.
This is a real blessing to those of us who live alone. As you said, Pad Thai is not one of those things you can make in big batches, portion out and eat later. And I love Pad Thai. And I'm lazy! Thank you, thank you, thank you!!! ;)
I absolutely LOVE this video. Especially that you didn’t miss any ingredients out or make it less authentic - you just showed us how to prep in advance like restaurants do. Please do more videos like this, that break down the steps for authentic recipes into stand-alone prep ingredients, components or stages that we can all use during the week, whether for a single person, couples or large families. Loved it :)
Ah, I love this. I used to make a poor man's "pad thai" when I was in college/med school. Didn't use veggies or tamarind (used a little hoisin instead), but otherwise it was almost completely like this including the lime. A Thai person would probably call it a monstrosity. But I could make like 10 dinners for like $5. I still make it today. My family calls it my "peanut noodles." Good to see this video so I can up my game a bit now that I can afford it. Thanks!

It's so simple to get right. It's amazing how many restaurants screw this up. I use your recipe combined with what I learnt on the streets of Thailand (basically the same), and everyone I cook it for says it's better than anything they've had from restaurants here in OZ.

Pad Thai one of the few dishes that is virtually impossible to make in one huge buffet size batch at once, and 9:07 proves it. It is not the same when I or even restaurants try.
My family is Indian but we love Thai food. Made this recipe for dinner today! It was restaurant style perfection! Thank you so much for breaking the recipe in levels of preparedness. I found the right kind of rice noodles for pad thai in our local grocery store. Will be certainly stocking the noodles and making this recipe again with a little more red chilli flakes for some kick next time 😉 🙏🏾

Is it ok to substitute jaggery and soy sauce for the palm sugar and fish sauce?
i always enjoy watching Palin's videos - she's very entertaining! Once I attempted to make Pad Thai and it became a "Hot Mess" literally!...LOL. What I learned from that is to sear the Tofu first and make sure the noodles are cold when you mix them in so you don't overcook them and they fall apart. Since then, I haven't attempted Pad Thai, since I don't like it that much but I do make stir frys with noodles and Tofu and it turns out pretty good. I always remember to prep those noodles and tofu!
Since I'm preparing Pad Thai the way you showed in your videos it turns out authentic and so, so, so delicious 🤤. And now we even have the short cut - pure happiness! thank you so much! Lots of love from Switzerland

I made this tonight (used dried shrimp in place of the big shrimp, didn't have sweet relish nor Chinese chives) but it was still on par with what I've had at Thai restaurants in Boston. OMG! Look at that range behind you, yet you start with a butane stove! The most common, authentic thing in a Thai kitchen! Love it! American standard height countertop though.. you need a stool to stand on...lol.

I tried your previous recipe and it tasted pretty good! Will definitely try this new one!
I love your channel. Thailand's power is soft when it comes to cultural PR but so effective it's astonishing: all Thailand has to do is send Thai people out into the world. That's it. :D How so many people come to love Thai culture, Thai food and develop an interest in buying books and watching movies etc and keeping the country somewhere on their personal radar is all due to Thai people just being themselves. Same goes for the Philippines. I have no idea how these countries can produce such a high volume of charming, friendly, open, kind-hearted, generous and even-tempered citizens. Not everyone is perfect obviously, but if you played a word-association game and asked folks all over the world what their impression of Thai culture and Thai people is you'd get an overwhelmingly positive batch of words being circled. PS= Pad Thai is the undeniable 'gateway drug' that makes people enthusiastic and confident about ordering more adventurously when dining out in Thai restaurants, before eventually coming to KZread to patron channels such as this one. What a glorious way to spread cultural awareness and put both diversity and unity into the same sentence! THANK YOU so much for your channel. I love your shows! I'm a cook and recently watched your pad Thai recipe to learn about Thai cuisine, before interviewing at a Thai restaurant. I've never made Thai food and was a little nervous about it. You made it simple and easy! I ended up accepting a position elsewhere, but I'll definitely be making more Thai food at home, thanks to you! I can't wait to make that mango pie!!!

Thank you for this!! I’m too tired to cook in the middle of the week but I also hate left overs (can’t eat the same thing more than twice in a row). So this 5 minute meal (with prep from the weekend) works beautifully for me.

just enjoyed my first homemade Pad Thai and Thai iced tea thanks to your recipes and tips. It really did come together in 5 minutes. The advanced prep helped a ton, and your advice not to skimp on the bean sprouts was spot on. I used store bought tofu puffs and left out the dried shrimp, but it was still delicious! I can totally do this for a weeknight dinner now.

Looks gorgeous. I made the Delia Smith version here in England many years ago. She owned that it was adapted and not authentic, but I absolutely loved it. Thai food is to die for.

Ok, first timer making Thai food. Bought a new wok. Seasoned it from your other video. I followed this recipe. Put stuff in the fridge for mid week pad thai. It's SO GOOD!🎉❤😅 Thank you. And not sweet. Never ordering this from a restaurant again.

My Pad Thai recipe is from your channel Pailin, and it's the best thing I have ever cooked! I also make a big portion of sauce to use for multiple servings cause the sauce is hardcore. I make my tamarind as you did in the other video, from the tamarind pulp, so yeah, not a quick process at all! I make even bigger batches of sauce than that!

Sawadi Kap. We have visited Thailand many times in the past and my Neice has just returned from her very first visit. She is missing Thai food and I have offered to cook a Pad Thai for her. Following a recipe is one thing, but being shown the proper technique takes it to another level. ka cun kap.

This a a fabulous concept and thank you for sharing it with us. I have premade a Vietnamese sauce in this way and also a mee krob sauce I came up with that was delicious but time-consuming to make.
