The century-old wood fired oven in a beautiful village | Sourdough bread making in France
BOULANGERIE LE SOLEIL LEVAIN -
Savoillan is a commune in the Vaucluse department in the Provence-Alpes-Côte d'Azur region in southeastern France. Savoillan is fortunate to have an old-fashioned bakery where the bread is made with natural leavening, cooked on a wood fire with organic flour.
Emmanuel and Chisato Delalande have developed a specialty of bread and cookies in a traditional way. The wood-fired oven was built in 1925. A particular mode of cooking requires very precise heating before cooking the bread, placed on the stone sole. And this oven has been preserved by the prefecture and villagers.
And the spring water from mount Ventoux was developed in Roman times (753 B.C- 476). BOULANGERIE LE SOLEIL LEVAIN has used this water for making bread.
The type of natural leaven:
1. Sourdough (some bread contains yeast, but some doesn't)

the opening with him and his wife having tea - just beautiful!
I went to France twice to visit the battlefields of my Grandfather and discovered “Le tradition”. Traditionally made wood fired baguettes are the finest bread on the world. The fine, sharp crust and flavour of the French flour is unique. A Tradition, tomato, salt and pepper and I am in heaven. I envy you French and crave your baguettes everyday. I continue my search to find something similar in Australia, but alas, only disappointment. God bless your Boulanger’s. Beautifully produced video.

I live in Philippines, and have similar issues here... But I have solved it ! Just follow two posts (both in french unfortunately), one on how to make sourdough, very easy unlike these videos that tell you that the process lasts 7 days ! the second on how to do baguettes with the sourdough... The biggest secret is in what we call in french the "TPB" or in english, "base temperature" It is a simple rulke that indicates at what temp you must prepare your dough. If you do it by hands, rule is 75 : temperature of ingredients + ambient temperature. If you use a mixer (like a kitchenaid), rule is 65 (as the dough will warm up in the bowl). Usually we play with the water temperature as it is easier than having to store the flour in the fridge... Another secret is to find some good flour, equal to what's called in France flour T65, that you can easily fdind here : basicingredients.com.au/shop/grands-moulins-de-paris-imported-french-bread-flour-t65-traditional/ first post on how to do a sourdough : (you can activate subtitles in english) kzread.info/dash/bejne/qHiTw9efoqW6mrg.html second post on how to do french baguette : (also subtitles available in english( kzread.info/dash/bejne/a5-i2pmqn9Csd7w.html I hope you will soon taste again "real" french baguettes 😉

by the way, I would highly recommend to use a rectangular pizza stone for your oven, if you decide to bake breads (not only french baguettes) as this will boost your oven to quite a professional baker oven 😉 If you go for it, I bet that your friends and family will become your best customers ! he he he

@@tripackonetooth4910 thank you for taking the time to offer your advice and comments. I am progressively have better results with my baguettes. I do buy the T65 from Basic Ingredients, which is great, and use pizza stones. Most of the time I make them traditionally by proving the dough over two or three days using a poolish. I am about 80% there. I struggle to get the lightness and sharp crispness of the Boulanger’s. But I persist. Thanks again. N

@@nickmolloy9563 Definitely go for sourdough ! It is so simple to do...And you will be surprised at the result for baguettes
Wow-what a fantastic video! The skill involved to run that oven is mind blowing.
This is a superb account of a largely lost way of life, absolutely inspiring, remarkable, a little exhausting! Thank you for sharing this story.
When I saw this video I pulled tears. I worked years in bakery and the job was already hard for 2 men with brand new natural gas oven, this man is alone and using this old oven heated with wood.
Oh, man! As I was watching this I had to go to the kitchen, slice some bread and spread it with butter. What a beautiful place, beautiful people and, YES! Beautiful bread. Vive La France!
😭 I've never seen such beautiful bread in my life, just look at the color of the bread! Nice music selection for the ending montages, you always picked the right music. Thank you for all the videos.
That is an authentic bakery shops. Oh man l love enjoying by watching his works , in every steps of the proccess and completed the daily works. Awesome. Thanks for sharing master baker.
The amazing thing about this videos is that we can see how is made, the effort the skill, and the amazing result, the bad part is that for us living in another part of the world, probably will never test it, jus imagine how it taste…. Just wondering how is waking up,going to the bakery every single day to have this available for us, lucky people of that town
growing up in america with old world brick coal fired bread ovens in new jersey this video is fabulous never change a thing on how you make the dough and bake the bread. I wish i could taste the bread thanks for sharing
The knowledge and skills just to take care of the oven is huge and the breads wow! Definitely a lost art.
I think this person is so amazing he’s so passionate about his job or his his work I love his little store so cute

😊Grande uomo e gran lavoratore fa tutto da solo 👏🏻 complimenti
I loved this. Makes me want to come and visit. Such a beautiful setting. That oven is amazing.
I love bread making… If ya ever need help on a cold winter morning gimme a shout!!
The skill it takes to make such a simple thing like bread such as this boulangerie does is incredible, it's art, not just mere bread. We have an Italian style bakery in my city that's been open for 123 years, they make their bread in much the same way, but on a bit of a larger scale. Always a line out the door and it has never changed in the 25 years I've been going there.
My bucket list is to spend 2 weeks there if i can stay in remission from stage 4 lymphoma awhile longer what a beautiful place
my dream is to be an apprentice in a bakery like this, even though I have been baking sourdough bread for 9 years🙂
Hermoso pan, hermosa villa y bellas personas.
Many thanks for sharing the wonderful video!!

Reiya san i love your channel, trying to find good bread in Tokyo is so challenging it makes me miss europe
I was born in a bakery, my carousel was not a carousel on the playground, but the dough mixer (200l). Then, when I grew up, I baked bread and bakery products. A wonderfully made film, even greater skill of the poet. I cheer you up and wish you a lot of health.
Barely many words were spoken, but I understood the whole video. Thank you. I'm working on a sourdough starter, and this video helps with the baking. 🍞
That’s an awesome way of presenting masters at work. Almost meditative. Thank you so much.
That's one thing a good French artisan never forgets: clean up is part of the work; you don't do good work in the midst of a mess.
Thank you for sharing your passion ... the overall story made sense.

Beautiful like poetry.
Thank you for your beautiful video. I run a small wood oven sourdough bakery in Adelaide, Australia. I didn’t have access to pre-made parts for my Gueulard oven so I built them all myself. I wonder how long parts in your oven last such as the gueulard funnel and the fire grates and firebox door? Thanks
I watch this video once every few months
Beautiful
