Tehran: Beluga Caviar is Black Gold

In this episode of The MUNCHIES Guide to Tehran, Gelareh feeds tankfuls of paddlefish and beluga-valued at up to $35,000 per fish-at the nation's first home of farm-raised caviar, Shilat Fish Farm. Eventually, this prized bottom-dwellers will be killed and harvested in a factory in Northern Iran, but currently, they live in conditions similar to their species' natural ocean habitat.
In the spirit of farm-to-table fine dining, Gelareh gets the royal treatment at Li Dona, a members-only restaurant and jazz lounge. She learns that when it comes to fish eggs, bigger is not necessarily better, as she tastes spoonfuls of "black gold" on toast served with butter, onion, egg, pepper, and lemon juice.

    Caviar is a very useful product, I completely agree with you! By the way, if you are interested in a proven brand of caviar, then this is definitely Lemberg! Really natural caviar without preservatives, for a reasonable price.

    We bring groceries worth $70 every month. So... 50g of this is equivalent to 4 and a half months of our food 😂 Btw I'm from India so things cheap here 😅

    Very nice what you served to us here, but i have to mention one thing. The fish dont need to be killed nessassary to harvest the caviar. The russian people just give the fish a drug to make it feel dizzy and then cut it open, take the caviar out sew it like a doctor and let the fish cure. With this method they harvest 12 times the caviar from the fish, so it is definitifly not nessasary to kill the fish for harvest.

    Is they really an expert bout caviar? Why they use the metal spoon?? Caviar must be use by wooden spoon or spoon that been made by bones only.

    Caviar harvesting literally began in this part of the world. Iran was once the 2nd largest producer and exporter and still today is one of the biggest producer/exporter. Wooden spoons are prone to developing bacteria so over time more likely to taint the flavor. So I'm afraid your notion is a myth.

    one thing you should know is that you never serve caviar with silver spoon... that's a No NO.. you need to serve it with mother of pearl spoon. as the eggs are so sensitive .. you just kill the whole thing.. and also mind you that size does matter.. lol.. the bigger the eggs the more expensive the caviar

    Iranian caviar is quite nice, but the best caviar is Dutch, real, silky soft and slightly salty.
