Thai farm ‘milks’ fish for caviar, sparing their lives and saving money

Michelin-starred chef Thitid "Ton" Tassanakajohn is adding an affordable Thailand-made delicacy to the menu at his high-end Bangkok restaurant. The black caviar, mostly associated with sub-Arctic nations, is breaking into the Thai fine-dining scene, thanks to an innovative farm outside the capital. The Thai Sturgeon Farm offers a more ethical and affordable product. Sturgeon are traditionally killed to extract caviar, but the farm’s hi-tech harvesting methods “milk” the eggs without killing the endangered fish.

    This technology already existed several years ago, I remember watching videos and article about it. But I guess this kind of surgery is still not as efficient as off-ing the fish for egg-harvesting, so not many adopt this method. Hopefully more and more farms use this method :). I remember mentioning this surgery several years ago and some commenters asked me where in the future I came from, hahaha. Glad to know we're in that future now :).

    @@minimino9878 i highly doubt there is much effect to the fish, if any. They mention they need the fish for as long as possible for profit, so they wouldn't do harm to the fish, which leads to shorter life span.

    Same. This is video is more precise and clear. The warning message before the video is chilling reminder that those fishes took it last breath while having a cold tube stick to you Vagena. I wonder if there is an other way to save the fishes? The scientists most know a way. I'm thinking of the scene from Indian Jones when he switch a fake rock while extracting a gem to avoid triggering the trap. In other word, why not fill the fish with fake green eggs that's that's biodegradable? 🤓

    Many fisheries and even some fish breeders do this, they purposely squeeze out the eggs of the fish so they can get more fish

    @@winniekhongkp if you put it that way then eating is not right. Plants/Fruit that we eat are all living things, Animal produce that we eat comes from living things. Would you survive with just water? Maybe 2 months, but thats it. There is an ecosystem for a reason, maybe go to school to have a broader idea.

    The fish is endangered for a reason. People love that delicious caviar (fish eggs). This way future generations can enjoy this delicacy instead of the fish going extinct.

    Eat it with blinis, shallots and lemon juice for your first time. Everyone tries it on it's own and it puts people off because the salt and fish flavour is quite strong. I used to have your mentality until I became a Chef, now someone says caviar and I will bury my head in it 😂

    I have the same question. I hope they can anesthetize the fish in the future so it does not feel any pain during the harvesting. I also hope they provide bigger pools of water and don’t over-harvest them.

    @@juanlemod I agree. These farm pools they provide the fish are inadequate. Although these seemed very clean, and that is important, they seem very cramped, and I can’t imagine this being healthy for the fish. A lot of people have yet to realize that the environment the animals are kept in contributes to the quality and even the taste of the food. These are living and breathing creatures. They are complicated and need to be treated with less simplicity. We are barbaric in our practices but I understand that in order to feed such demands corners are cut.

    2:55 if I know the slightest thing about eating caviar it’s the fact that you NEVER use a metal spoon. I haven’t had caviar before but I’ve had salmon roe and trust me eating salmon roe with wooden chopsticks is much tastier than with a metal spoon.

    These are farmed sturgeons. Definitely not endangered. Endangered species are protected and you will never see them in farms. 🤦‍♀️ There are species of sturgeons that are endangered though. We have to figure out which type of sturgeon they have in the farm to confirm if it’s the specie that’s considered endangered.

    🎣 The best caviar in the world is related to the shores of the Caspian Sea in Iran 🇮🇷 . Farmed caviar is much more ordinary . Also about caviar, we say live fossil instead live dinosaur ! Also in the case of the southern coasts of Iran or the shores of the Persian Gulf, the best beaches and marine resources belong to Iran, not desert beaches like Dubai or Doha !

Silvers are not to be used for caviar as well- it will impart undesirable taste to those expensive eggs as well.

    @@apostleofd119 silver is also inadvisable for caviar, silver can also leave metallic aftertaste and spoil the rest of the batch(esp if you use the spoon like in the video above). If you can't afford shell or golden or wooden utensils, you can even use plastic spoon. Yes, cheap plastic spoon you can buy in dozens(but for the sake of earth, stay away from plastic utensils- wooden utensils are cheap enough anyway, if you buy the high quality ones it can serve you for years even). Keep your silver plated utensils away from caviar.

    To be honest, we don't know those people. It won't make a different if they die like the fishes because they keep breeding like crazy. I'm jk I have a question. Is there a way to save the fishes? The warning message before the video is chilling reminder that those fishes took it last breath while having a cold tube stick to you Vagena. I wonder if there is an other way to save the fishes? The scientists must know a way. I'm thinking of the scene from Indian Jones when he switched a fake rock while extracting a gem to avoid triggering the trap. In other word, why not fill the fish with fake green eggs that's that's biodegradable? 🙂

As a former Chef and a qualified fisheries manager I can tell you sturgeon particularly captive bred though released to initially repopulate, sturgeon is a tough (for fish) meat and unless you're uneducated the main purpose to increase wild populations is so their caviar can be harvested after 11 or more years and have a self sustained stock pile. The financial return once sturgeon mature would be 20x or higher compared to the market price for a sturgeon fillet. I'm not saying that some people won't catch them but knowing China that will carry a severe punishment if caught. But a food source is not the primary purpose for the release.

    Not going to lie...it looks like the fish is in painful labor. I cannot imagine having to do this every year considering the Sturgeon can live up to 100 years. Same lifespan as a human.

    There are no babies. These are unfertilized eggs. No pain at all for the fish to pass them out. Usually a fish lays a few hundred thousand eggs in one go. Yep, every mating season, they produce that many eggs. Some sturgeons can produce up to 2 million eggs a time.

    I just came to this video after watching a killing method video hoping this method would be better. I eat meat but watching this feels so wrong. Caviar is so unnecessary…why even do this…As a woman I’m watching this female fish and just imagining myself being pinned down, legs up with my eggs being harvested. Feels so wrong. I feel like it should be: if you catch a fish in the wild and you find caviar, awesome. Take the caviar and eat the whole fish. But this seems like some sort of effed up torture house 🤮
