I’m a caviar farmer that has lived the majority of his life in Iran Caviar farming isn’t that brutal nor wasteful. In Iran we pay the “Shilat” (an association related to Iran’s ministry of farming that controls anything around the subject of sea products) to send out special ships and only catch the specific kind of fish we need. Then the wild fish is brought to us with special vans and put into tankers that are filled with water from the caspian sea that is filtered and circulated to mimic their wild habitat. The tanks are regularly inspected by the shilat to ensure good conditions for the fish. We use the hormone to extract the eggs and then we have to tag, mark and return the fish back to its natural habitat to reproduce and live a healthy life. Killing a fish that has tags on it will send you to the court immediately. And that’s how we keep the breed alive. In northern Iran you can actually buy some of the wolds highest quality caviar that is shilat certified for cheap in corner shops. Although it will still set you back a couple hundred dollars depending on the caviar, The same thing would be sold overseas for thousands of dollars .

I've eaten caviar exactly twice in my life. The first time was when I attended culinary college. The second time was when I worked in a seafood restaurant. I can't afford a third time. I wish I could. It's actually pretty good.

I caught a sturgeon one time but wasn’t expecting it we were mainly after small mouth bass but it was too big/cool of a fish to haul into our small boat anyway so we let it go so guess me and my uncle unknowingly avoided a ticket😅

In that case, I’m eating Caviar on my sandwich every day. Eggs from other fish are extremely cheap and eggs from salmon taste a bit similar to the real deal at maybe 5% of the price.

Its always when a fanous chef says its good is when the price skyrockets. Some chef in mexico made pruce on eggs skyrocket from 300 pesos a dosen to 1k pesos a dozen. Dive thise numbers by 20 and u get the dollar equivalent

0:45 It’s always supply and demand. Basic economics determine that as long as there’s multiple suppliers, the price will vary depending on availability and demand. Like white flour in the medieval ages was pricy due to its rarity and due to that rarity, the price of it was incredibly high. Then it was used by royalty as an ingredient as a status symbol due to its high cost. It wasn’t pricey due it’s status but the status came from the price. Not the price coming from the status if you know what I mean. Of course there are outliers like the diamond or glasses industry where essentially a few corporations have an insanely huge choke hold on the industry and don’t have to deal with competing suppliers which allow them to shoot up their absurd prices.

There is also a type of caviar coming from the North Atlantic cod. It is a big thing in Norway and it is quite cheap. Like 2-3 dollars a tube
I might die without ever tasting caviar and I'm fine with that. It was never on my bucket list and never will be.

Caviar used to be dirt cheap in Russia, my mom used to eat with spoons and I'm not coming from a wealthy family, but then the production decided to switch to mostly export and adjusted the price accordingly. It can be accessible if the manufacturer decided so

chief _ reminds of normal caviar but its taste is a but more milder and more sweet like. I dont fancy neither of them but once every 2 years i always come back to it. Its flavor is surely unique tho and for someone who likes the normal version very much this is just perfect.

I really love red caviar and it tastes for me like salmons' fat. The best way to it caviar is to put in on a fresh bread, put butter and then caviar on the top.

Fun fact in Piscataway Park Maryland and approximately between the 1900s to the 1930s they caught a 60 ft Atlantic sturgeon and it's well documented there's even a picture of it it took approximately 30 people to pick it up it's a pretty cool picture you should be able to find it online I haven't tried looking online but if you go to their website or if you live in Maryland and you go to Piscataway Park you definitely will see the picture there
