Everybody loves meatballs! I think meatballs are a perfect example of Americana and they belong on the American table. This is a classic recipe and very simple to prepare. It calls for three types of meat, but a combination of any two-or even a single meat-will work as well. The recipe makes four dozen meatballs, but you can cut it in half and it will work just as well. The sauce and meatballs freeze well, but are best frozen in smaller quantities so that they reconstitute quickly.

I learned how to make our family Gavy every Saturday watching my Mother in the kitchen, She made it on Saturday so we would eat it on a Sunday with the Family ...
My mama used bread soaked in milk and squeezed for the meatballs. She always added an extra egg to make them fluffy. Then she dropped into the sauce raw. Don’t stir for about 20 minutes. Shake pot to make sure doesn’t stick. She also added some meat in the sauce as a flavor starter. Best part about Italian cooking is each “mama” had her own way. None are wrong but that’s what we learned so it’s fair to say each family has their own technique. I love trying other methods. Lidia, yours are always the best❤️ Ciao!

I'm southern so have to learn the "right" way to cook Italian style, I've been putting milk in bread for meatballs but not squeezing. Might just leave it out like Lidia. It's the same in Southern cooking, but my grandmother 's way of making cornbread, biscuits, almost anything was best.😅

@@jaa4742 With Italian cooking each region uses their own methods and ingredients. My other granny from Naples put cinnamon and raisins in her meatballs. There really is no wrong way but I try to stick to regional ingredients. When you differ, it becomes Italian American, which is also very good!!! Happy Cooking!

My maternal grandma was from Naples and did the same. Sometimes pine nuts too.
I remember going to church, and my nonna is cooking Sunday dinner, after coming home from church, my nonna always had a meatball for me, miss you nonna♥️ 3:54
A treat to see how Lydia makes the absolute classic.
I like frying the meatballs in the sauce pot before the sauce is put in. It makes a crunchy covering.

That's what I do too, making certain to use just enough oil so as to not make the greasy at the finish. The fond adds its own flavor as well.

@@LordCommandor In the mid 90's-early 2000's I'd usually watch Julia Childs, Jacque, Justin Wilson, Lidia and one other Chef who focused on Mexican/Spanish food on PBS on Saturday's. It was great!
The thing about spaghetti with tomatoes is that it's great with meatballs, it's great with sausage and peppers, it's great with meat sauce, and it's great with plain old marinara. All similar dishes but still very unique and different, making spaghetti and tomatoes one of the most superbly versatile combinations in existence.
*I love watching Lidia and her family. The food always makes my mouth water. And grandma is so adorable.* 💕

My memre Lorraine, Jesus rest her soul, used to use Hunt's tomato sauce to make spaghetti with until Ragu came out on the market and she used to make spaghetti so good that her nephew, my cousin Billy and his sister's Kathy and Mary used to always say that auntie Rainey had the best spaghetti in the world, and of course my mom who thankfully is still very much alive also made some pretty good pasta sauce back in the day and was basically doctored up Ragu. Nothing wrong with using the Jarred stuff although it's okay if you make everything fresh too.

As a Brazilian from São Paulo, I am beyond in love with the Italian cuisine. The Italian community has a great influence in Brazilian cuisine from São Paulo State. My hometown, Taubaté, has a huge Italian neighborhood, with its own museum. Their annual food festival is amazing, tons of Italian food, music, and its culture. Also, the Italians helped a great deal in building São Paulo City and other cities. Great influence, really great. Here in NorCal I know of Monterey - central state annual Italian Festival, it is great too.

I boil my meatballs in the sauce without frying. They come out so moist and tender. That's the way I learned from an old Italian woman years and years ago. Leftovers are wonderful for Meatball subs. I do make my sauce like you though. So fresh. Yum

Lydia, just finished watching you on TV. Saw your ricotta cheesecake suggestion. My husband’s family has been making this forever. It is a staple for our holiday. Eat it for dessert and breakfast. Great dish. I will send pictures this holiday.
Very interesting! I've never seen bay leave in sauce. Always great trying new things.
You didn't show it here but in the written recipe, on your site, you did. In the written recipe there is no garlic in the meatball recipe at all. I'm not a fan of that much garlic in meatballs but... over my lifetime I have NEVER seen anyone flour their meatballs before frying them nor have I ever heard of adding celery or carrots to meatballs! I can only surmise these ways are something regional!

😋 Yum. I'm a Georgia girl. Learned from watching my grandmother on all things southern. She could cook, but not spaghetti. She cooked it to death. I often make meatballs and am so glad to see your way. Although, I might keep airfrying my meatballs? Is that a horrible mistake?

My grandmother was an awful cook and hated the chore, and my mom’s mom died when I was an infant, so I unfortunately don’t have any wonderful memories of big bountiful feasts on Sundays and holidays growing up. My own mom died before my children were born and my MIL wasn’t a cook, so my children have missed out as well. But I try very hard to make dinners special and happy occasions by using friends and neighbors instead of family too far away. It’s not ideal, but I think it’s the best I can do. I think there’s a lot of people in my situation because people move for jobs and economics often now, so some families just don’t have that cohesion and connection any longer. My children aren’t emotionally scarred because Thanksgiving was not with family but best friends and neighbors gathered instead, but I do wonder what it must be like to have family gather around a table full of well loved family recipes every week or so. It sounds lovely.
