I adore this beautiful old man cooking, he loves it so much! He really puts his heart into it, he makes my soul happy😍
This recipe is so mad good! It has become one of my signature dishes and I'm not Italian!.I make this atleast once a month and preparing this recipe is like a ritual all the way to tasting the meat. Thank you from my family to yours and teaching us how to roll meatballs like a BOSS! Bon appetito ❤️

I use to taste the Raw chop meat also Growing up Today only if it's fresh ground from the Meat Dept, & not Packaged Meat etc.Reason being, You do not know, How long it's been laying in the Meat Case Dept etc.

It's called Sauce (salsa di pomodoro) Gravy is what you put on a piece of meat.

I don't know where yous get this gravy shit from . I am italian and my mother grandmother and great grandma called it sauce ! Gravy is put on beef or turkey . Get it right its sauce !!

I made this recipe for my sister and I. We really liked it! The only difference is I used beef only & dry parsley instead ( bcs that's what I had on hand but next time I'll use fresh). The meatballs were tender and flavorful. I will definitely make this recipe again! Thanks for sharing your delicious recipes. 😋👍❤️❤️❤️
Watching this video made me think of my dear dad who passed on 13 yrs ago. My family always did things from scratch so watching Chef Pasquale brings some great memories to mind. I love the Italian accent. My gram had a strong accent too and I miss hearing her talk or as others would say yell...lol. Chef Pasquale ur meatballs look delicious. I make mine similar but I drop them in my sauce bc I cook my sauce for hours so when the sauce is done so are the meatballs. Thank you for a nice trip down memory lane. I miss my family so much.

Deanna Ketchum Same here. My dads parents came here from Italy in the early 1900s. Loved the accents. They never had disagreements in English-only Italian. And my Grandmom could cook! All from scratch. Miss them.

Us Ialians rock and yes we can cook no cook book needed no measuring ever needed. Just great Ittalian food passed down to the families. Viva Italia Sempre.
I cannot express enough how much different meat is when you grind it yourself. You have so much control over the content and taste.

How many pounds of meat mixture,2??it dont say on recipe
I do not eat pork and most meatball that is in freezer bags in the grocery store already have pork in it.The turkey meatballs I didnt care for the taste. However I love this homemade recipe.I did chop my onions,added to the ground beef along with Greek seasoning,pink salt(only salt I use) and sage to amp the flavor.Oh and yeeees I put my foot in the sauce and everything was delicious.Words can not Express my appreciation !

Truthfully cooking doesn't need to be exact measures..... baking does though off by a little bit when baking will change the outcome, but cooking generally doesn't need to follow strict rules. Even his oven at 400 for 15 mins could be oven at 425 for 10 mins, or 350 for 20 minutes. Whatever you are comfortable with as long as you get there. The wrong measures is the difference between a good cake or a bad cake in baking, But with cooking it's all about taste and you do what you like to taste.

Pasquale, being of Italian heritage on my Mother Mary & Father Pete, I my never get to Roma, but your receipes make me feel I have already arrived! Thanks for at least (5)of your “Receipes”, that I have memorized!
Make "meatball heals" = get some nice soft rolls (not too long) cut them in half and hollow out the bread on both ends making a "nest" for each meatball inside the ends (heals). This gives you less bread = less filling and more meatball per bite. Try it, you'll like it---thanks Chef Pasquale!

That is all of the same ingredients that my Italian grandmother used in her meatballs. I need to make some more, soon.
This is the default recipe almost everybody in Italy is using, except for the way the balls are grilled, fried or put in the sauce right away. It is much easier to fry the balls in a pan by the way, no difference in taste and no hassle. Size depends on where you come from. Make sure there is enough moisture in the meat and it is at room temperature. And use Italian bread, soaked in some water or milk. We normally use some stale bread or leftovers.

Just made these meatballs for Christmas. OH MY!! They are delicious!!
Chef, as soon as you said “the sauce has to go inside” I smiled. The way I make my meatballs let’s them absorb the sauce. I’ve had restaurant meatballs or even friends invite me over for their meatballs only to bite into something as chewy as an eraser and tasteless. They do it all wrong and then roll the thing so tight it doesn’t absorb any sauce. I may voice my complaint at the restaurant but never at my friends dinner table. Sometimes I’ll make them a little too loose and they start to split up. I put those aside for myself (maybe a midnight cold meatball sandwich with a glass of sparkling grape cider). Anyway, I love your show! Stay well
