His step-by-step instructions will show you how to make his juicy meatball recipe like the top chefs in Italy. This is one of the best Italian meatball recipes, which rivals how any Italian Grandma makes meatballs. Great with spaghetti, as an appetizer or on a hero sandwich!
So, what makes the best homemade meatballs? We use 1/3 veal, 1/3 beef, 1/3 pork, and only the freshest ingredients. In this episode we went ahead and fried meatballs as well as baked them. My favorite way to eat them is by frying them, but baked Italian meatballs taste great as well. Once you have made and tasted these Italian meatballs, you will agree this is one of the best meatballs you will have ever eaten. BTW, out here in Washington State, we have a few great pizza places now (not so back in the day), one such is, ....tah-dah---- BROOKLYN BROTHERS PIZZA. It's far to go when the traffic is bad (when is it not?) but my taste buds love it.... we used to have another pizza place called NY No.1, but the man retired and made me sad. He brought everything including the ovens and the tables and booths.... those were the days....

Was looking for a genuine italian meatballs recipe for some time and I stumbled on this. You should try carbonated water instead of plain water. They use it in making Sevapi which is a Bosnian meat that looks like a breakfast sausage. The carbonated water makes the meat very juicy.

I go back and watch them sometimes, but I've seen them all abunch of times.
My Italian grandmother never put dry breadcrumbs in her meatballs..said it drew the moisture from the meat...always soaked sliced Italian bread in milk maybe 6 or 7 slices than added the soaked bread to mixture...but everything else the same as yours...looks delicious

Thanks! We are used to making a batch of meatballs for a restaurant. It’s very difficult to use soaked bread for a large amount. Oh, grandmother and mother used soft bread.

We use almost this same recipe. After frying we throw the meatballs in the crock pot to cook for at least 6 hours in the sauce. Comes out delicious and moist every tim

My mother in law did the same by soaking bread in the milk. She never liked the breadcrumbs.

Same. My mother always used stale bread soaked in water or milk and then sqeezed out. You can also add tomato sauce if you have it simmering on the stove already 😊.

EXACTLY how my mom made meatballs when I was growing up and I make them the same way !The only difference is my mom used rice instead of bread crumbs. We have a Sicillian heritage, so that's what was handed down from generation to generation to generation. The recipe is EXACT including cooking in olive oil ! Bravo my man ! Do you put pignoli and raisins in your meatballs? I'm also Sicilian, I absolutely hate it LOL. I don't mind the pignoli so much. The raisins make it much too sweet. It is also put in brasccioll.
We made this recipe last night. It was such a hit that the next day it was made early in the morning to take to a potluck in the afternoon. Thank you!

This is how we make our meatballs, veal, pork and beef from my great grandmother’s recipe. We drop them raw directly into the gravy, but I LOVE your recipe for the sandwiches. Now if I could only find some good bread to complete the feast.

That is exactly how I do it . I do use the same bread crumbs but I use FAR LESS crumbs ,I also add some water to the meat mixture . I learned that from a GREAT NEW YORK Restaurant and MARTHA STEWART. I also will sometimes use just SIRLOIN meat

Amazing, my grandmothers recipe that she taught me is almost EXACTLY the same except we use milk instead of water. Beautiful! The only better sound than meatballs frying in a pan are chicken cutlets or sauseeeege! French baguettes? Where’s the seeded semolina bread? 🤣🤣🤣😁👍👍

I've made many meatballs over the years, but your recipe is my new favorite. I never fry or bake them, preferring the velvety texture from dropping them in the sauce to cook through. So delicious. The only thing I did differently was add a pound of italian sausage and fennel seeds into the mix. My family devours these every time! Thank you for sharing!

My recipe is similar. I grind my own beef from the chuck and pork from the loin. I use 2/3 beef and 1/3 pork. Fresh ground multi-colored pepper, half as much cheese and garlic plus a pinch of ground cloves. In the summer I throw in some fresh basil. If I'm putting them in the sauce, I bake them, if in a sandwich I fry them. I enjoyed the video. Good job!

I spent my lifetime to make a meat ball just the way I liked it. It was pretty much this. I wish I saw this 50 years ago. Bravo. Frying is such a pain but I think it comes out best.

I know this video is a couple of years old but I made these for dinner today and OMG what a great recipe. Very tender meatballs. I usually bake meatballs but I did it your way in the frying pan and the meatballs held together in the sauce and reminded me of getting a great meatball hero in NY, which I have yet to find in Florida. Now I make my own!

I’ve never had a problem baking them. Maybe there wasn’t enough binding agents in the mix? Anyways, as long as you were able to enjoy them. That’s really the only thing that matters.

Mmmmm they look amazing. I had an Italian deli in south Florida for 11 years. We made 1000’s of meatballs for our hoagies and pasta dishes . We baked ours because of the length of time it takes to fry. We used “Italian bread” or what Floridians think is Italian bread soaked in milk , crumbled and added to our meatballs. Made them super moist. You could make a fortune coming down to soflo and make real NY Italian bread instead of this white bread Italian bread they sell here. It reminds me when I used to go over to my grandmother's house every Sunday in maspeth New York. She was 4 ft nothing and put Jimmy Durante to shame... 😆 It sucks to get old I miss my grandparents and my family every Sunday about 15 people she cook for I don't know how she did it. Very close to my 100 year old Italian grandmother’s recipe … except for the “seasoned” breadcrumbs. We’re from Naples… so we add raisins, stale Italian bread cut into small chunks & sprinkled with Extra Virgin olive oil… or unseasoned breadcrumbs and a little wine. The deep frying is also a no-no… 80% cooked in shallow oil… then fully cooked in the sauce which simmers all day… which tenderizes the meats like butter!

The 3 meat combo is what makes the wonderful taste to these, very similar to my Grandma' Susie's recipe as passed down to me via my Irish mother, who learned to make Italian Gravy for my Dad. I would change just a bit, to match my Grandma's technique.... 3 less eggs, maybe just one egg per pound of meat; no cheese at all. Add both fresh and dried garlic spice, as they have different flavors, both I love. My mother never used fresh and we loved it. So, I use both. Add cheese when serving, as desired. Add fennel seeds and red pepper for sausage flavor.

I’ve tried a bunch of meatball recipes, never found one that I really liked, well, until this one. Absolutely delicious! I, like you, usually don’t measure, so I guess I used this recipe as more of a suggestion, 100% not disappointed. Thank you! This one works for me. I froze the ones I didn’t use for subs, I’ll use some for pasta and the rest for meatball sliders for Christmas appetizers (our Christmas dinner). Again, thank you!

I know this is an old video, I'm a chef also and milk is better than water. I also wouldn't put all that salt the grated cheese is salty already. I'm surprised when I saw you guys and you were Italian I thought you were going to break out the loaves of Italian bread instead of breadcrumbs! The meatballs look awesome.😊

Thanks for sharing your technique! Typically whenever we make a smaller batch, we do use bread. When we were in the restaurant business, we used to make no less then 50 lbs at a time. Breadcrumbs were just more efficient. 😊

@@catherineg9943 depending on your taste grated cheese is salty . Premixed bread crumbs can also be salty. I guess it would depend on the individual. It also might be problematic if you have health issues like so many of us do from the rich Italian foods that we were brought up on!

Yep this is how I always made them growing up in Brooklyn my mom would tell me to use the inside of the Italian bread that was sitting out a day or two instead of the bread crumbs makes them really tender but didnt have patience for that lol
Totally interesting to see this recipe. I have done my meat balls almost, very close, to the same way for years. I just learned by trial and error. Another strange thing is I sometimes oven bake and sometimes fry them. Meatballs like this go with anything! Even just for snacking with a good bowl of sauce for dipping. Sorry I know you call it gravy. I am just an average dude and have always called it pasta sauce. Anyhow shout out to the brothers!

My mother always used white bread soaked in milk, u have to fry to get that great smell, l am italian, she would say don't burn them cathy, but that's how l learned , they taste great right out of the pan.

We make our meatloaf with the same 3 meats. Old recipe from a long gone famous local restaurant. I worked with a mgr from there in a local deli and got the recipe from him. I have used it for meatballs as well.

2 thumbs up! I haven't even made these yet, but just seeing your ingredients I know they'll be banging. Nice to see people know how to make a PROPER Italian meatball. I cringe when I see people use only ground beef, instead of equal parts ground pork, ground veal and ground beef. I think my Italian grandmom used 50% beef and then 25% pork and veal... but I lost the darned recipe during a move from Arkansas to Pennsylvania and sadly my mom started showing signs of dementia and can't remember where she put her copy. I'll give these a shot and report back!
