The Secret to Making Incredible Italian Meatballs
Today I'm sharing my family's secret ingredient to making incredibly tender Italian meatballs! They're better than any Italian meatball I've had and are the best addition to serve with your favorite pasta. I hope you enjoy this recipe as much as my family and I do!
SECRET INGREDIENT ITALIAN MEATBALL RECIPE:

INGREDIENTS
1 lb ground beef 85% lean is best
1 lb ground pork (or split 1/2 lb pork + 1/2 lb veal)
1 cup breadcrumbs
2 eggs
1 cup ricotta cheese
1 cup fresh parmesan
1 small onion or half of a large or medium onion
2 garlic cloves
2 teaspoons fresh parsley, finely chopped
2 teaspoons fresh basil, finely chopped
1 teaspoon fresh oregano, finely chopped
1/2 teaspoon (each) salt & black pepper
3-4 cups marinara

Finally!!! A meatball recipe that I actually like. I was in Tuscany several years ago and had the best meatballs of my life, I've tried over a dozen recipes by many different Italian KZreadrs but none have come close. This one is almost perfect. I appreciate that a lot, Damian!! This are definitely the best I've had. A lot of Italians in Italy like to do milk with the breadcrumbs/soft bread for moisture, so that's an option instead of ricotta. But i think ricotta does the trick perfectly:) I'm glad you enjoyed them so much!

try chopping then sauteeing the onion if you don't want it to be noticable inside the meatballs, it works as well.

I always do that along with green pepper for meatloaf.

@@marwar819 I made the decision to go all mostly white (my island is oak) because I didn't want to regret bold colors after 5-8 years. Neutral would be the safest decision, but I'm still trying to figure out how to warm up the space!
my grandmother was Italian, from Bologna. The secret is soaking fresh bread in milk instead of bread crumbs. You will have softer meatballs

My family cooks the meatballs right in the sauce. No oven or frying in the pan. Put them straight in the pot of sauce and cook. All the flavor of the meatballs helps flavor the sauce. So good. I am going to try the ricotta cheese next time I make meatballs. And great job for being the first time. It's harder than you think talking to a camera

@@Asimplepalate Hi Bethany I made these today for the family, and the girls brought there boyfriends. OMG Lady they went down so well you would not believe it !!!. My oldest daughters boyfriend waited until after the meal and said to her 'Your dad bought these didn't he' The reason he asked her that is that whilst at Collage he worked in an Italian restaurant called Bianco's which had two genuine Italian chefs, and he said your meat ball recipe was better than there's 😮😮 I would say that was amazing praise for these beauties. The appetizer, meatballs at Carrabas have ricotta cheese in them. They are the best meatballs I've had. Also, I like to mix all of the ingredients first and THEN add the meat.

Love this, and 1st time here. Sometimes Big Brother gets it right with algorithms. Beautiful chef, presentation, kitchen and food. Similar recipe here, except I turn the meatballs 3 times way in oven to prevent a flatter side then cook more in sauce. A dear buddy insists on plenty of cheese in the sauce when simmering, and it is pretty awesome too. I cry too much finely mincing the onion, but will give the grate a go. But, one question...for all...most Nonni add the egg as You did. An old uncle would mildly beat them (not full scramble) with a healthy drizzle of olive oil drained from a can of quality tuna (which he then used for a salad or separate sauce/pasta.) Just conversation, not recommendation. You are SO right on all the fresh ingredients. God Bless and just subscribed! Thnx!

Well done video... and I'm an expert at cooking videos... My meatballs except for the ricotta... that's new... I also have learned to mix with just one hand and keep a clean hand for holding the bowl and such...

Thank you for sharing your recipe. Good video, good explanations and demonstrations, very easy to follow. I make my meatballs almost identical to yours, but I have never put in the ricotta before, will give it a try next time for sure. I do like to use the three types of meat as well. Also, I tend not to use bread crumbs instead I finely ripped apart bread and soak it in milk. I think the ricotta would make up for that. I too prefer to bake my meatballs.

I do the bake method, also, but then i add to crock pot of my tomato sauce/paste/oregano that has been simmering on low for awhile. 😊

I wish I could comment privately because it is kind of jerky to suggest cooking techniques to a cooking channel. That being said, I made meatballs like this with very rich meat for added tenderness. This gave me leeway to use the broiler to brown both sides of the meatball. I used tongs to flip them. Also, you are a cute couple. My wife and I send our regards.

I just finished making the Meatballs a couple of Hours ago. I can't Stop eating them. They Truly are the Best, Most Moist & Flavorful Meatballs I've ever Made. No onions in Italian style meatballs.
Great recipe. Putting 4:36 onions in fridge before processing will make them less strong. Or won't burn your eyes

Mix up the slurry first and then you can incorporate the meat with a fork

If I have homemade, I use my San Marzano tomato sauce asimplepalate.com/blog/san-marzano-tomato-sauce/ or Rao's if I don't have time to make my own sauce:)
1:49 pay very close attention or just don't slide your finger across what could be the front edge... The secret with the cheese might be obvious to some. It surprised me I would add some tomato paste instead and use extra sea salt.

I have one and need to use it because I know my knife is dulling scraping the board haha

The first time I cooked meatballs I followed the recipe the meatballs came out fine, he second time I just did it from memory and forgot the cheese it didn’t taste the same

I put smoked beef sausages in my sauce.
What would make it even faster is if you scooped them all on the tray and then went back and rolled them , because you are not picking up and putting the scoop down between scoops.
