My go-to butcher shop is my favorite stop on my grocery shopping rounds. Not only do they have a far better selection, and the best quality meats, they also have flash-frozen cuts (way better than putting a steak you’ll save for later in a home freezer), some wonderful rubs and spices, and a formidable array of cheeses.

Definitely a great tip...if you find a good butcher and create that relationship, you will learn more about every cut of meat, know where their meat came from, know when it was butchered, know which day of the week to visit... choosing the right meat makes a huge difference in flavor

In spain is very easy to find good meat, it's a shame that is hard to find it in the uk
