    When Marco purposefully tries to chop onions poorly, like a home cook, he still chops onions better than 99.9% of people. His knife skills are insane. Top five all time, for famous chefs, without a doubt

    I tried this last night when making an onion jam for my burger. Really took my time with it (I'm still learning knife control, so the chopping took a good 10 minutes). It is unquestionably better. Onions caramelized in maybe 1/4 the usual time, and the jam ended up just PACKED with flavor. Using this technique for the remainder of my life.

    @@zeyyadfarooq6235 onion jam is pretty much caramelized onions with a bit of balsamic, so pretty common especially on steak. It goes super good on a burger.

    It's all about having the right knife as well. Needs to be somewhat heavy and very sharp. Not jagged sharp, but actually sharp. Takes some time to learn how to properly sharpen a knife, but it pays off quikly, as a sharp knife guarantees less injuries.

    What I love about Marco is that although he presented this vastly improved chopping technique, he also recommended simply grating the onion as a time-saving option. This is a chef dedicated to the food, who doesn't show off.

    Sometimes I think he has simply given up on teaching to the high standards he has for himself, and now he is teaching / speaking to the general audience, just notice how many times he says you can do it the way you like. He seems to have realized that even a lot of his personnel in his top restaurants couldn't achieve what he achieved, and removed all expectactions he has from anyone listening to his advice.

    Paulie did the prep work. He was doing a year for contempt and he had this great system for cutting the onions like MPW. It used to liquify in the pan with a little oil. It was a very good system.

    Johnny Dio did the meat. We had no broiler, so Johnny did everything in pans. It used to smell up the joint something awful and the hacks used to die, but he still cooked a great steak

    He had this wonderful system for doing the Onion. He used a razor, and he used to slice it so thin that he used to liquefy in the pan with just a little oil. It was a very good system.

    Remember, there is no recipe. No need to season, the chicken stock pot will do that for you. You may ask, why I'm commenting on a video of mine on youtube, well it gives the video that golden value, and secondly it assists with the viewer count of the video. Kinda like doing two jobs in one. You can click like if you wish, but, I'll be very honest, I kinda like commenting. As a boy, I always loved watching myself. If I'm going to watch a video, my favourite has always been one of mine. It's your choice what you like. I don't always comment on videos, but sometimes I do. I'm asked many times what to do with what one should watch on youtube, I always say, make it very simple, make it very quick. Once we start, it's approx 20 minutes, 30 minutes. Never forget, the recipe is only a guideline. If you like your videos a little longer, have more. If you don't like it so long, don't watch it all. It's your choice.

    The catering college technique does requires a sharp knife, in order to cut the onion while still holding it together without it falling apart. But his custom technique will work with any decent blade

    +ASMR Angel I dont know what knives you use, but just sharing my experiences at home. Recently in my place, we have a proper chef knife, and a sharpener. So much difference compared to a fruit knife. You might think because the kitchen knife is thicker its worse for cutting, but its not. Because of its thickness, the blade doesnt flex. I find its actually so much better to cut with a kitchen knife than a so called vegetable knife. Just that it always needs sharpening every 2/3 days for home usage. Or you can get ceramic knives which require less frequent sharpening.

    For everyone complaining why the host is talking too much, it's initially a radio show, judging by the setup. So he has to explain every single thing to the listeners so they can visualise what's going on in the studio. He also has to talk fast and have great control over the entire session due to the limited time they have. I used to work in radio. How the entire show looks on video and how you hear it on radio is entirely different, and I understand how easily it can be misinterpreted as the host constanly interrupting or talking over the main subject.

    It’s almost ten years later that I’m seeing this, for the first time, but wow!!! THAT is finely chopped. The man is amazing. No wonder other chefs revere him. They dislike him too but I am certain that’s because they are so jealous of his undoubted talent.

    That's because the way Gordon does it enables him to chop an onion finely in about 10-15 seconds, whereas Marcos method takes probably a minute per onion.

    Actually this method is best suited to a home environment and not a professional kitchen beyond use for - as Marco says - risotto and other similar foods. If you chop as MPW does you cannot store it for long as it will turn incredibly acidic quickly due to all the juice and flavour having been released from the onion already. Since the vast majority of professional kitchens rely on prep and efficiency, the standard catering college cut serves best.

    There are different ways of doing the same thing when it comes to cooking, and each have their own pros and cons. Marco has a finer dice, but he takes longer to do it. For a larger dice, Gordon's way would be more practical I think. So I guess neither way is better, they just have their own places in the kitchen.

    My goodness, Marco is talented. He makes fine chopping an onion look so effortless. Just look how fine that really is. Ever tried doing it the Marco way? It takes some considerable practice and a very sharp knife. And that's why Marco is the best. He has learned all the 'little things' that together make for 'the best outcome.' That's called skill, knowledge, and wisdom, of a talented man who has evolved and mastered his craft to absolute perfection. Bravo Marco.

    I chop onions finely for sauce often, and I come back to watch this video every once in awhile to humble myself. I'm so amazed I say "holy fuck" out loud literally every time I watch the video. I can't replicate what he does here while hes chopping quickly even while I'm taking my time and actually trying. I can get my onions fine enough to almost dissolve into the sauce, the same with my garlic so it doesn't leave chunks and so it imbues the flavor properly into the sauce; There's no way I could get them as fine as he does here. It's incredible.
