Time to smoke some Presa Iberico in my custom built reverse flow offset smoker! And if that wasn't enough, I'm grilling it caveman style in the fire box at the end. And to get that flavor to the next level we're covering it with some blue cheese. Dang delicious!

Just saw this Hank. Nice cook, that's the cut I'm ordering next. Big lover of bleu cheese as well, will give that a try.

We got it all this week. Funky tunes from the Hankster, caveman cooking and an Iberico masterpiece. Who knew you could cook shoulder to 56 + sear. My question, how much of the rub really survives the caveman treatment?

Thanks! Yes, that’s a good question. I’d venture a rough guess and say 50%, give or take. Highly unscientific 😄

Thanks! No, they’re identical.
I dunno... I wouldn't put rub, much less blue cheese, on a waygu a5 steak... I'd feel like wasting money. But ey, to each its own :)
