    Sorry Pitmaster. Vincenzo is absolutely right. As an Italian I feel you're poking and sort of offending a hole "popolo". Stick to what you're best at. The ravioli are crazy tiny, too commercial as Vincenzo pointed out. The pasta execution was absurdly incorrect. If you don't incorporate the pasta into the sauce you're doing it completely wrong. Non hai nemmeno spadellato la pasta, common man. And no, I'm sorry, Italians don't say they can cook the world and better than everyone else. I have to agree again with Vincenzo. Italians are guardians of their beautiful, simple, already perfected (over centuries) their recipes.

    I live in Houston,Texas. I was able to source “Ibericus” hogs. They are bred from imported Iberico hogs. But, on average the meat, according to their web site, is $25-$30 per pound.

    Iberico pork may be readily available in Europe, but is almost impossible to get here in Australia. When you can find it the price is so prohibitively expensive that it just isn’t worth the cost. Some prices exceed Wagyu beef costs. How about barbecuing some genuinely affordable cuts of meat that the average Joe can afford, just like you used to when you started?

    Indeed .. Secreto is probably my favorite cut , and it took me quite some time to find it here in the Netherlands. I come from Uruguay and it was super easy to get there, so I’m happy I finally found it here too (only found it online so far). Glad you enjoyed it!

    @@albertofernandez9798 Serrano is cheap as f here. Ibérico is what you need to try, and if you get the chance Ibérico de bellota. Those are expensive even here, 500+ euros per ham.

    As spanish and a meat lover, i recomend you to try pluma or presa ibérica. These cut of meat have less fat but their flavour are awesome!

    So i had this 4 cheese ravioli pasta in my kitchen as well, didnt like it, not even a bit. But maybe try the truffle ravioli at your local wholesaler wich i think has the same i use in my restaurant. (also from the netherlands) and this dish will be 1000 times better i am sure :) good video, been watching from early on. good job roel

    To the best of my knowledge, Iberico pork is not available in the States. If it is, it certainly is not readily available.

    As an advice, there is many many "ibericos" that are actually not. Please make sure you can trace back the iberico as this have to have different seals and certificates if they are true ibericos.
