The hours I could spend sitting in the driveway on a perfect summer day sipping vino just listening to his life's journey! A wonderful human anyone would be proud to have for a grandfather! This episode brings me back to a child cooking with the families women making cabbage rolls and pierogi for the ENTIRE family. How I miss those days!

And such NICE people too! Four years ago I used to do medical deliveries and one night I dropped off medicine at a house and the lady of the household invited me in. I'm one for accents and always try to pick them correctly as I did as a limo driver for twenty years, so instead of guessing, I simply asked her where were they from and she said Poland and I told her of my love for perogi since the age of eight, and we both reminisced about a longtime closed wonderful European deli owned by a lovely Polish lady and her husband both from Warsaw. The store was full of products from Warsaw, and she made fresh hot food for their steam table and her stuffed cabbage and her perogies were off the chart! I was buying DOZENS of perogi every week and easily gained 10-15 lbs! When we finished reminiscing, this kind lady said "wait a minute, don't leave yet" she went into her refrigerator freezer and gave me TWO bags of homemade perogi! I was completely blown away by her kindness and generosity. Good stuff, great people indeed. I look forward to making this vegan style.

In my family we always cook two different versions for the same dinner (in two different pots, obviously:)) - one with tomato sauce and the other one without (and we have to make like 40 of them, they vanish so quickly:)). And we also use the water from blanching the cabbage together with the stock to pour over the gołąbki:) Personally, I prefer the version without the tomatoes, the broth/stock has this very clean delicious cabbagy taste then :) But both versions are great :) And by the way, yes, I'm Polish living in Poland all my life:) Greetings to you and your wife, and thank you Pasquale - I love watching you cook :)

You are the only one in all the years I've watched anyone and everyone on KZread who make them even remotely like my family and I do! Everyone else loads them up like they're making meatloaf. We too cut the ribs off the backs of the leaves and i don't see anyone else do it like we do but you. We too only use 3 ingredients in ours but onions aren't one of them. We boil them on the stove with only water and apple cider vinegar. We also put plates on top of ours! Have never seen anyone else do that. We use about 6 plates tho so they don't come apart. We only use tomatoes when we make a pan we bake in the oven of them. Never on the stove top boiling. Although ours are slightly different I'm still amazed how similar they are! You made my day! ❤

In Romania, they are called Sarmale (sar mahl eh) - I've americanized it by placing a sliced kielbasa "disc" in between each one in the pot/oven (I both boil or bake them). Also, it's all in the cabbage leaf. Proper leaves make the process (and taste) so much better. I have found that FREEZING them after boiling helps tenderize them (freezing the water into crystals to shred the plant cells a bit). Then thaw/re-boil them prior to rolling.

Gołąbki. However at my home we cook gołąbki in broth and make sauce in separate pan. We make actually one of two sauces: tomato or mushroom one. We have also vege version which we eat on Christmas eve. Meat is replaced with mushrooms and carrot, but you can add it other veggies like bell pepper or zucchini.

Thank you, Pasquale! My ex’s mom made these too, but only cooked halfway on top of the stove then transferred into a baking dish, and topped it with all that delicious sauce. I think that helped thicken up the sauce...once it was cooked, she would plate it with some of the sauce on top and then add a dollop of sour cream.....😋😋 soooo good... And yes gulumbke (100% sure I spelled it wrong) IS hard to say but that’s what she called it!! Thanks again! Making it this weekend for sure! 😉
