Protein: 13.32 g
Carbohydrate: 34.13 g
Fiber: 9 g
Fats: 29.72 g
Calories: 430
▶️ RECIPE INGREDIENTS: (12 bars)
150g Almond - 1 cup
100g Walnuts - 1 cup
130g Pumpkin seeds - 1 cup
50g Goji Berry - 1/2 cup
350g Pitted SOFT Dates (Jelly Like) - 2 heaping cups
1 Cup Smooth Almond Butter (265g) OR Nut Butter of Choice (preferably unsalted)
1/4 Teaspoon Salt (I have added pink Himalayan salt)
1/2 Tablespoon Ground Cinnamon OR to taste
Square Pan: 9 X 9 X 2 Inch (23 X 23 X 5 cm)
▶️ METHOD:
Start by toasting the almonds for about 2 minutes on medium heat, then add the walnut and pumpkin seeds to it and toast for another 2 minutes. Once toasted immediately remove from heat and transfer it to a heat proof plate and allow to to completely cool down. this will prevent the nuts from burning.
Now add the dates and almond butter to a food processor and blend it well and then add the toasted nuts, goji berry, ground cinnamon and salt. Blend it to a coarse mixture.
▶️ PROTEIN/ENERGY BARS:
Prepare a pan by brushing the bottom and side walls with oil and line it with parchment paper. Transfer the mixture into the pan and press it with a spoon to pack it firmly. Take your time as it is REALLY important to press it firm, especially the corners - this will prevent any air gaps and prevent the bars from crumbling while cutting. Smooth out the surface.
Now cover it with plastic wrap and let it chill and set in the refrigerator for 2 to 3 hours.
Once it has set remove from the pan and cut it into desired shape with a sharp knife. Make sure to clean the knife with paper towel in between cuts this will keep the cuts clean.
After cutting it wrap it individually in plastic wrap or parchment paper and store it in the refrigerator. This stores well in the fridge for 3 to 4 weeks.
▶️ PROTEIN/ENERGY BALLS:
Take two tablespoons of the mixture and press it between palms of your hand until firm and formed into a ball. Then smooth out the surface. You can store it as is in an air tight container or wrap it individually in a plastic wrap or parchment paper.
▶️ IMPORTANT TIPS:
👉 As soon as the nuts/seeds/dates are toasted remove it from the heat and transfer it to a plate to cool down. This will prevent it from burning. DO NOT leave it in the hot pan.
👉 Use SOFT dates only
👉 If the mixture gets too dry and difficult to bind add some more almond butter
👉 sometimes nuts/seeds/dates are dryer than usual and may need more binding. The fix is to increase the amount of almond butter so that it sticks together. Just empty the mixture into a bowl, add some almond butter mix it thoroughly until it starts sticking together and then transfer it back to the mold, press the mixture again and refrigerate
👉 (Optional) Brushing the pan with oil will prevent the mixture from sticking to the sides
👉 It’s really important that you take the time to press the mixture properly in the pan until firm especially the corners. This will prevent the bars from crumbling while cutting
👉 To keep the cuts clean, clean the knife with paper towel in between cuts
👉 You can shape the mixture into balls, if you do not want to make bars

    Hi I have been making similar recipe for few years now with only flaxseed. I just have my 2 cents to add. when you grind the nuts/seeds, for a longer duration, they release their own butter/oil, so adding mejdool dates to that mixture, will give it enough binding texture and shine, you don't need to add any additional butter to it.

    @@yusramohamed5031, dry roast whole flaxseeds, preferably the darker ones, in low flame in a sausepan. you'll know when to stop, it will release the aroma. keep stirring it, do not leave it and go. it 'll take less than 10 mins. the outer skin will start tearing apart, that's one indication. stop, and transfer to another plate to cool. take seedless mejdool dates, the softer the better. Once cool, grind them into a powder. Then add chopped mejdool dates and blend again for a minute, flaxseed should release its oil, and dates should get all pastey. The measurements are as per your sweet tooth. then take out this mixture, and cluch small portion sizes into one palm, like a little more that a tablespoon, press it firmly in one palm for 3-5 times, then using both hands, roll it gently into balls. You don't need to refrigerate it, you can easily store it for more than a month. Added benefit, ideal for constipated patients. Do not have more than one serving in a day, if you have too many, it'll mess with your stomach, lot of toilet rounds

    Love the recipe. Can we use parchment paper or butter paper to wrap the bars instead of cling wrap. I try to avoid plastic as much as possible.

    Thank you! However, I hope I haven't broken my food processor... Used 2 of them. Nope! I'll use my meat grinder next time. The bars are very tasty! I added also a liquid form of coconut oil and sunflower seeds. And I didn't have those berries you used (I know how good they are!), so I used raisins. And I'll add some honey from my bees next time.     You know? I always felt sorry when I had to discard remnants of Turkish coffee mixed with ground cardomom for they still had so much richness, aroma and strong flavor and wished I could reuse it in anything sweet and I had ideas but this here seems to be the best recipe that couldn’t go wrong! I will though go easy on seeds and nuts mixes so the coffee and cardomom aroma and taste would still be vivid! Much obliged! 🍃🌾

    Thanks for this recipe but wow, i've never bought almond butter or pitted dates or gogi berries, these all sound very expensive, this does look healthy & yummy, so i'll make these but with a few different ingredients, in place of almond butter i'll use all natural peanut butter, instead of dates i'll use raisins & in place of gogi berries i'll use dried cranberries & the nuts. I also might add a 1/2 tsp almond extract & 1/4 to 1/2 cup of sesame seeds & maybe 1 tsp of lemon juice.

    I don't have access to most of the ingredients except for almonds, walnuts and unpitted dates. I wonder If I can make it with just these three ingredients.
