Hmmmm que rico! Just so you know lovely ppl, the Salsa Roja is really a basic Salsa(w/out orange rind) that IF you like Mole &/or Enchiladas you just add or switch some different dry Chiles, or use these that Pati is using. For Mole, add roasted almonds, abit of oregano, Chicken or Beef Bullion or even fresh poultry, beef or veggie broth, 1 roasted tomate, blend, simmer n add peanut butter, Mexican chocolate disc & simmer on low, stirring so Chocolate n peanut butter will blend beautifully n so "sabroso"(@ 30mins) add choice of meat or papas/potato n simmer covered for 20-30mins. the tacos look beautiful and the salsa sounds delicious but wouldn't this be better with a fattier cut of pork? I would imagine pork loin would get very dry over this long cooking time

Hi Pati. I noticed that you didn't strain the Blended mixture. So you don't have any issues with pieces of the peppers and other things that were Blended? I remember one time I Blended rehydrated peppers and I forgot to strain it, and the sauce was full of pieces.
Could I do this with any other meat…my stomache doesn’t handle pork so I stopped eating it over 20 years ago. Maybe something fatty like chicken thighs?

Yes, you can also use Turkey or duck. Annnd, IF you have a gas stove, you can actually hold deseeded dry Chiles over a medium low flame with a tong n lightly roast, being careful to not burn too much, then plop in choice of broth or H2o(😊). Continue recipe as Sweet Pati instructs. Buen Provecho 😊. "ISA"
