Chili rellenos are my favorite.so good.nachos are my second favorite mexican dish.
My favorite Mexican dish! Even though I pretty much love all Mexican food. I agree that they aren't hard to make, but they do take a good amount of time. I usually don't make them, and instead get them at Mexican restaurants.

So after watching you and Marcela Valladolid make chiles rellenos, I finally made it for my family and used the toothpick method to close them... I COULD NOT FIND THE TOOTHPICKS AFTER FRYING THEM lol. Other than that, these were delicious and not as labor-intensive as I thought they'd be :)

Oh my goodness lol so did you consume the toothpicks? I was just thinking to myself that it would be hard finding the toothpicks after being battered and fried.

@@latashahoward3943 After I set this beautiful platter on the table for my family to Ooh and Aah at, I had to say WAIT BE CAREFUL AND EAT SLOWLY BECAUSE THERE'S TOOTHPICKS IN ALL OF THEM!!! lol. We just had to remove them as we went so thankfully no toothpicks were eaten haha

I almost think you don't really need toothpicks because some of the chiles got so delicate that they tore elsewhere while stuffing them and were impossible to seal with toothpicks. My brother and I tried with some and they ended up looking like voodoo dolls with like 5 toothpicks stabbed through them lol. So we just let it be and the cheese didn't ooze out while frying because of the batter

I made this last night. *You can use a HAND MIXER with a WHISK ATTACHMENT to make the egg whites stiff. *I made just 2 chile rellanos - I used just 2 eggs *I used my own canned tomatoes (look for youtube ITALIAN GRANDMA MAKES CANNED TOMATO SAUCE) The taste was incredible, like a Mexican restaurant. It was literally the best, ever. When I used my own canned (& salted already) tomato sauce, I added 1/2 onion & 3 garlic cloves (hint: peeled garlic can keep well in the freezer), then I blended it. It tasted “weird”, then I added better than boullion for the broth + water. Still tasted weird and awful. But Pati says to cook it for 15+ mins. I did. It tasted fantastic!!!

When my father had his gallbladder removed his doctor instructed him on keeping a low fat diet. He loved chile rellenos so I made him a chile relleno souffle using the same ingredients. It turned out great. He especially enjoyed the fluffiness of the egg.

You are my favorite cook on KZread! Please cook with more vegetables! Mexico has a huge obesity problem because they use very few vegetables in their diet. Its a constant diet of meat and tortillas. Please teach the world to incorporate more vegetables in Mexican cuisine. add diced carrots, peas, cauliflower to the cheese filling. serve a side salad with you tortas ahogadas. Love all that you do!

I think Mx food is more vegetarian rather than meat based. Everything has beans, rice, corn, etc. One doesn’t have to use meat all the time.

I noticed there wasn't any chili added to your salsa. It's basically a tomato sauce, correct. You added the cup of chicken brother and reduced it. How much do you reduce it by? In other words should it reduce by 1/2 cup or more?

My chiles always fall apart & tear after I stuff them 😔

I used the sauce to make Spanish rice and I Will also use it on the Christmas tamales. I have 2 dozen tamales I bought at a Mexican restaurant in East Los Angeles and also a quart of red sauce. However, the red sauce is way too spicy 🥵 hot. It’s so hot I can’t use it. So, I’ll use the sauce in this video instead.

When you feel a sauce is way to hot, you can add a bit of Mexican crema or sour cream and it will get milder Joe :)
