This is our Christmas special! Oretta has been making fabulous cappelletti pasta since she was a little girl. And cappelletti in brodo are an essential beginning to Christmas lunch; the cheesy filling for them is special to the Romagna area of northern Italy. Watch to find out more.

    My family made capalletti every Christmas. I haven't had it since moving to Seattle and this makes my heart soar. Tomorrow it will be 11 years since my Italian grandfather died. Thank you so much for this.

    I can’t tell you how excited I was to find this video. My grandmother used to make Cappelletti on her beautiful pasta board, her family was from Modena. This brought tears to my eyes ❤️

    My grandma was also from Modena and her Cappelletti was always a special treat whenever we visited her in Western WA. She taught us how to make it we could never make them as beautiful as she did , even with her little arthritic fingers.

    My Nonni taught my mother this. Every Christmas we had "Caplit" as we called it. Maybe the kids named it and it stuck or it's our Baltimore accent...lol I still make this every Christmas now that my mother has passed.

    Needa find me a large rolling board, flat like that. What an eagle eye, this artisan. How quickly she cuts uniform pieces, and her dainty fingers when she places stock fixings in pot. Another grannie gem. Thanks for these educational productions. Viva la pasta🥟👨‍🍳💚💚💚🍅

    I love this channel, and I appreciate that you keep each video very short and to the point, but I wish you’d spend just a little more time on showing the technique of forming each shape. It was hard to see exactly how this lovely grannie made the finished shape. Maybe just show the process a couple of times from different angles so those of us who want to learn but need visual lessons can understand? Thank you for such an important project, these are legacies that would be lost without your project.

    we make this for Xmas - my Grandmother was from San Marino - our filling is a little different & we use the turkey carcass from Thanksgiving to make the broth

    It's not quite a pasta, but my family makes these desserts called "garters" at Christmas- like spirals of pie dough covered in red wine syrup. I'd love to see someone make this recipe.

    THANK YOU FOR THIS SO MUCH!!!!! My mom would make these. I just needed the pasta recipe. I tried to make it once on my own however it was missing something. I noticed in the possatelli that you put nutmeg can you put nutmeg in these? My mom would make the broth with chicken and a can of tomato sauce. But she used just ground beef on the inside. Maybe she didn't know the type of filling to put in but cheese ground beef. And it was so good I need to try this very very soon

    hi Christine, yes you put nutmeg in the filling. Cappelletti in Romagna have a cheese filling; cappelletti from Marche have a meat filling and it also include nutmeg. best wishes, Vicky

    Study up on your Italian , for directions other information for buying goods and for using public transportation. also greetings and salutations, you will be treated much nicer for trying. take a tour when you get there or you will miss a lot. enjoy Ciao.

    Hi Watitora , I’m from central Italy ( Marche) and I’m not an expert but I can say that home-made pasta its a tradition that is rapidly fading away for many reasons , if you see some of these pasta-granny videos it’s easy to understand , my mother did it ( she passed away on 2008) my wife doesn’t . Nowadays we buy pasta from the store as the one you find all over the world , that’s mostly what we call : PASTA DI SEMOLA DI GRANO DURO ( durum-wheat pasta) and also , we have many dedicated store mostly called ‘ casa della pasta ‘ (pasta-house) or pasta fresca ( fresh-pasta) that make pasta in which the dough is worked by machinery instead of the lovely grannies of these videos . In this part of Italy ( southern Marche) we have a traditional pasta called PASTA DI CAMPOFILONE , or VINCISGRASSI , and OLIVE ALL’ASCOLANA E CREMA FRITTA ( stuffed and fried olives and fried cream) , many more traditional dishes are already extremely rare as the ones related to the rural Italy before the mass industrialization of the post wold war II . anyway all I can say is that these home made pastas has a taste no machinery can match. To the pundits : forgive me if I said some inaccuracies.

    0:16 my name is Oretta and now i'm going to show you how to make the stock and cappelletti 0:25 we put beef, the bone (can't see wich part exatcly), chicken, one tomato, one onion, one carrot and celery 0:40 then we make the filling for the cappelletti, this is campagnolo cheese, then we add mortadella, parmesan cheese...and we mix it...i almost forgot it (referring to nutmeg, probably)...that's mixed fine 1:40 now this, i have to say, both the cutting board and the rolling pin are 40 years old, i got them when i got married...we're a bit old 2:35 beautiful, the lady has got wonderful eyes (maybe referring to one of the ladies in the crew) 3:03 i'm done, let's hope they taste good 3:08 they boil (the cappelletti) and when they come up to the surface of the stock, they're done 3:21 they're ready to be eaten, buon appetito!

    I call myself British, and these are called cappelletti, not because I say so, but because that is the name given to them in this area of Romagna. The filling is different to tortellini. best wishes, Vicky
