@@MrMikkyn leading a simple life is the key. In all of the places where there are many centenarians, they have a very simple lifestyle - they are close with the people around them and they are satisfied with what they have. We could all learn a lesson from them.

O my gosh right?! She looks younger then her given age! I'm 43 lol and she's definitely has more energy than I do!!!!

The lady of 101 years old helping her invalid daughter… she has all my admiration.

It's hard to watch this video and not be awestruck by how 'young' Rosina seems. Her mobility and acuity and very impressive. Imagine getting to 100+ and **still** enjoying a quality of life like this. What a rare and special gift.

Looking at this sweet Nonna and how active she is, no one would imagine she is over 100 years old ! Amazing ! 😊❤️

Not important how long but the quality of life when you get old , keep eating unhealthy and processed food with no exercise and at 50 you'd be older than Rosina at 101

Nonna Rosina reminds me of my Mamma Stella, who passed away in May, at 97 years of age. Oh how I wish I could make ravioli with Mamma one more time! Making them without her is not the same, but I’m teaching my niece, because that’s how culture lives on. My love to Rosina e tutta famiglia! ❤️🥰

That has to be the best video yet! What an amazing Pasta Granny Rosina is at 101 years young! Her skin, dexterity and energy put us younger folk to shame! She has a great sense of humour too and is so young at heart, as well as being physically agile. Amazing-I’m in awe! Long may she carry on cooking. Rosina is amazing, running up and down those stairs, gathering veg, chopping up guanciale, rolling out that panella like a pro. I want to live to 101, and do it as well as Rosina!

I have to agree about the emotions that are brought up while watching Rosina. They weren't expected. Seeing her gives so much hope to humanity. This woman needs to have a documentary made about her.

My aunt from Le Marche taught me how to make pasta. She's in her early eighties now, still active and beautiful like this lady, which makes me wonder if there's some kind of magic in that region. I hope she makes it to 101 too.

101 years old and as sharp as a tack!

This is my favorite Pasta Grannies episode. Who wouldn't love how funny and snarky Rosina is. I wish I had some Italian in me and that she were my Auntie too (can't give up my actual Grannies).

101 is amazing. There must be something in Italy that people live productive long lives. It must be the simple lifestyle and regional foods.

hi Donna, it's a variety of factors: as you say, simple seasonal foods, they don't move far from where they were born, they are active all their lives, and they are very 'plugged in' to their families and community. Other factors can include faith and having 'a mission'. best wishes, Vicky

The tears of the old always bring "me" to tears as well. She has lived a life of sacrifice, holding on to care for a beloved daughter. So glad for her that her extended family show her such care and affection. They're all so lucky to have one another. The most terrible thing for me in getting older is not my own aches and pains or visits to doctors, but losing that older generation. I miss them every day, my nonni and parents and zii.

Such a sweet, cheery, charming, very lovable Nona. Every dish that Rosina cooks will be special..they have loads of love in each of them. See that special bond between her and her nephew Luccio. "I was there when he was born" That says it all. She has seen the beginnings of so many members of her family, and looks back with pride at all those generational moments. Nonas like her, will live forever in so many hearts. Bless you Pasta Grannies for introducing us to such unforgettable Nonas like Rosina..

Grande Rosina!!! Thank you so much for these videos. I am an Italian expat and feeling a bit old at almost half her age! These videos are giving me hope. I need to return to live in Italy at least part of the year as after almost three decades abroad I have felt rather displaced. I now aspire to become a pasta granny myself 😇

Look at the way she moves. She’s not in any pain. You can see that when’s she’s moving around. Wow

Just to appreciate more this beautiful video from my region le Marche : The translation when she was asked if she remember when she made it for the first time “ no , my mother had to have an operation so she went to Ripa Hospital “ should have been like this : Yes , my mother had to undergo to a surgery so she went to la Ripa ( local slang for a beautiful nearby hill town called Ripatransone ). At the time ( around 1930 ) the hospitals where not located in the coasts that where considered unhealthy but on higher sites as Ripatransone . The “no” she said in this case has the opposite meaning , is a connecting word we Italian say often without real meaning 😊

@@pastagrannies Yes you’re right I live in Porto San Giorgio , few kilometers from our sweet Rosina , and I’d say that at the time she was 12 yo the nearest important hospital in the area was in Ripatransone , there are many reasons why the main hospitals where not on the coast : health : malaria , history : main cities of the area where all inland : Ascoli , Fermo , Macerata , Camerino , it all changed in the first decades after WWII with the demographic boom of the coastal cities , today the nearest public Hospital for Grottammare is in San Benedetto del Tronto and together their beaches are famous as “La riviera delle palme “ one of the main tourist places in the Adriatic coast. As for malaria it was a big concern for a millenium for all the coasts of Italy and was eradicated in the years 1945-1960 by using the now forbidden DDT . Keep up your beautiful project , viva le nonne e le signore come Rosina ❤️

Wow, what a delicious dish. This lady is so inspiring. She does not even use a noodle machine and just improvises with the dough by not giving it any time to rest and it still works out perfectly. This dish is actually somehow similar to a carbonara variation from a chef I just watched recently. He was also using a broth instead of the more creamy version in the classic recipe.

Wonderful recipe! Rosina is so full it life and energy, and she takes such good care of her family. She seems warm and friendly, and her home atmosphere is comforting. You can see her love of her daughter shine through.

She raised a good family!! They take good care of one another. 🌹

Taccu is generally made from a blend of various flours. This is why she specifically mentions the "ONLY" ingredients she uses. Taccu should NOT be confused or simply equated with tagliatelle because Taccu is cut into a variety of shapes. Some cooks cut it like tagliatelle, others may shape it into recchiatelle (similar to orecchiette), but more times than not, it will be shaped like a parallelogram or a trapezoid. It is a very "ancient" pasta originally made from blending various types of flour, especially those of very hard grains. However, after corn found its way to the boot, polenta blended with wheat flour became an extremely popular combination to make taccu
