93yr old Maddelena makes tajarin pasta with livers from Piemonte! | Pasta Grannies

Tajarin is the Piemontese name for taglierini - extra thin, long ribbons of pasta. Here 93 year old Maddelena serves them with rabbit livers but you can swap these for more easily found chicken livers. Her restaurant is called Belavista in the village of Castellinaldo d’Alba, if you are visiting the area, and they are only open for lunch. The ingredients are as follows:
200g 00 flour, 2 eggs for the pasta. For the sauce: 400g rabbit or chicken livers, 1 small onion or shallot, heaped teaspoon of chopped rosemary, tablespoon chopped parsley, 200g cherry tomatoes, olive oil, salt, black pepper, butter to serve.

Yep.. fresh, pure, no processing and they work and worked hard like ox themselves! always moving.
"How well I did " proclaims Signora Maddelena jubiliantly. And of course she did. Her 60 years of hard work shows up beautifully in everything she does , from kneading the dough...a strenuous task at her age, ...rolls it out neatly , cuts thrm in delicate strips and tosses them into the bubbling, rabbit rich gravy. What she has prepared is sumptuous fare. Looks sooo delicious. Here's to your health sweet Signora! .

These Friday episodes are so inspiring. I usually use my pasta rolling machine. Inspired by Pasta Grannies I decided to roll my own the other day. DEFINITELY NOT AS EASY AS IT LOOKS. I’ll keep practicing, but will also continue to use my machine. 😃

Maddelena is a blessed powerhouse. Her generational restaurant where she still contributes alongside her grandsons is a treasure. I will take a pass on the livers but I have no doubt they were delicious to those who like them. Thanks for another great installment!

Gosh I am speechless seeing wonderful Maddelena working like a young one! no better than a young one! that dish looks superb, the two forks took me back to my childhood when my Aunts would dish out the pasta at Sunday lunch in my Grandmothers house, just precious. I’m so glad Maddalena loves her job and restaurant, because it would be awful to be working at 93 because you HAVE to, not because you WANT to. I love her spunk and humor, and I very much admire her skills. I’ll never be able to roll out pasta that thinly or cut it that perfectly.
