Hello.
I'm Boone Bake.
Today is dessert for adults.
I'm not a good drinker, but I can drink a glass of this Moscato d'Asti.
However, after a day, this jelly becomes really rich in taste and the texture is a little different from the existing jelly I have made, so the taste was very good.
It is perfect as an after-dinner dessert after dinner, so you might want to try making it later.
One bite of this little cake will make you feel like you're drinking a glass of fragrant, sweet wine.
Apples are so delicious these days, aren't they?
What to do with apples I was thinking about making a mousse with apples.
I made the Apple Pastry cream by mixing the apple mixture separately to bring out all the aromas and flavors of the apples.
The Apple Pastry cream was delicious even if I ate it separately.
So, I put the rest on crackers and ate it.
I made jelly using Lotus cookies that go well with apples and Moscato D'asti, which I often drink before or after meals.
None of the ingredients were splashed and it was really harmonious.

♥ Moscato d'Asti ?
It is synonymous with sweet wine.
Moscato Dasti means ‘wine made from the Moscato variety produced in Asti’.
Asti is an important wine region in Piedmont, northern Italy, the gastronomic city.
The representative variety here is Moscatto, and most of the grape varieties with the word ‘Muscat’ in their name have a rich fruity flavor and a very good aroma.
In particular, the alcohol content is very low, so it is very good for people who are weak in alcohol, including women, to enjoy it lightly.
Moscato d'Asti wine is made through a single fermentation in a stainless tank, and when the alcohol content reaches 4.5 to 6.5%, fermentation stops and sweet wine is born.
Moscato d'Asti is the freshest drinkable wine in the world.
It's a wine, but strangely sweet.
It's made from grapes, and it's strangely like very sweet apple juice.
Carlo Gancia, the hometown of Asti, created the first sparkling wine from the Moscato variety in Italy.
Inspired by a trip to Champagne, France, home of champagne in the 1850s, he started making sparkling with Moscato, a native Italian variety.
If you are using gelatin leave, subtract the amount of water you have weighed.
You can use the same amount of gelatin after soaking it in cold water.
If you want to use powdered gelatin, soak it in advance and then melt it.
And since we also weighed cups this time, even those who don't have a scale should try it.

15ml = 1Tbsp
5ml = 1tsp
1 egg (without shell) 53g
Heavy Cream (38% milk fat)
(Chocolate is minced, flour is before sieving)

[ 7cm * 4.5cm (Height) ]
83g Lotus Cookies (13 Rectangular Cookies)
35 g unsalted butter ( 2Tbsp + 1 tsp )
♥ Fragrant Apple Mousse
1. Apple Pastry Cream
1 yolk
25 g sugar (2Tbsp)
50 g milk ( 3Tbsp + 1 tsp )
50g apple juice ( 3Tbsp + 1 tsp )
(Boil 100g of apple juice over low heat to make 50g)
9 g corn starch ( 1Tbsp + 1 tsp )
8 g unsalted butter ( 1/2Tbsp )
5g Lemon zest (1 )
2. Making Apple Mousse
35g apple juice ( 2Tbsp + 1 tsp )
5 g lemon juice (1 tsp )
10 g sugar (2tsp+1/2tsp)
5 g powdered gelatin ( 1 tsp + 1/2 tsp )
25 g water ( 1 Tbsp + 2 tsp )
80g Apple Pastry Cream
3g Dijon Apple Liqueur
90g heavy cream (60% whipped) (1/3cup+2tsp)
5 g powdered gelatin ( 1 tsp + 1/2 tsp )
25 g water ( 1 Tbsp + 2 tsp )
♥ Wine Honey Jelly
360 g water ( 1 cup + 1/2cup+1tsp )
170g honey (1/2cup ) - (Equal amount of sugar can be substituted)
15 g lemon juice ( 1 Tbsp)
14 g powdered gelatin ( 1 Tbsp + 2 tsp )
70g water ( 1/4 cup + 2 tsp )
180g Moscato d'Asti (5%) (3/4cup)
(If you don't add Moscato d'Asti...
--- Replace with 180g of apple juice and reduce the amount of honey to 120g.)

I loved the idea of the bubble wrap to create the beehive effect!!! But to set the flowers and not have them floating to the top, all you had to do was to just dip your flowers in jelly, set them into your moulds and refrigerate for 5 minutes... It's a lovely creation, thanks for the inspiration!
