Looks to me like he's using a higher then the average protein flour, something like 16% protein. Is this Manitoba that he's using?
That's a huge calzone, double what we get in the US
Freshly made wagon wheel pizza - 14 euros. Here in the UK, dominos pizza about half the size, almost 30 quid.

In realtà fino a 4/5 anni fà la stessa pizza la pagavi al massimo 6 euro. Poi i prezzi sono cresciuti con il boom turistico.
