    He was always been a master, known in all kitchens if your a chef, sous chef, prep cook, or dishwasher. Why? No BS. He cooks without pretention. Efficient and Delicious.

    I love the times when he makes a recipe of his mother's or one of his aunts and then tastes it, saying "I think my mom would be proud" - it always comes through as so authentic and happy.

    @@smspain09 Yes indeed! I've love making my granny's "potato cake." She was a great cook. Very moist and spicy(not hot). It's like I'm tasting family history.....my mom on the other hand wasn't that great of a cook. I guess it skips a generation! Lol!

    Jacques’ mother, Mamman, was a super hard worker. She raised three boys during WW2 in France and was a successful restaurateur and smart business woman! Her work ethic was definitely an influence on Jacques! I was hoping to see more of her in this video.

    I am so thrilled that KQED is posting these Today's Gourmet episodes on KZread for all to enjoy the incredible talents of 'the chefs ... chef!' Jacques Pepin! I learned to cook some great dishes from these shows in 1991 and Jacques' Today's Gourmet cookbook! In 1999 I stood in line for 2 hours at Macy's Union Square store to meet two of my all-time favorite chefs, culinary teachers and buy their new book ... Jacques Pepin and Julia Child. I took my camera hoping to get a photo, but Macy's said autographs only. When I got to meet Jacques, as he was autographing my book, I told him that his cookbooks were the dirtiest ones in my collection because I used them so much! His answer rings in my ears to this day - 23 years later, "That is the best compliment a chef could ever hear! Thank you." To which I replied, "NO THANK YOU, JACQUES!"     I never saw or heard of this show. Jacques is a true master of cooking. I just love watching him cook. I used to watch him and Julia Child every weekend on PBS.

    WOOOOOWWW!!!! Nostalgia just hit me hard!! That catchy jazz tune opening brings me back to my old elementary school years...after the Saturday morning cartoons, I would tune in to the Pepin-Yan hour on KQED, because...because YAN CAN COOK, BABY!!! And then sometimes would watch Cooking at the Academy, another fave. My mom enjoyed watching and writing down the recipes and would cook the meals during weeknights. Welcome back to 1991-92! 🥰

    Don't forget Justin Wilson, Graham Kerr and even the guy who fell from grace, the frugal gourmet I think he was. My mom was so jealous of his peppermint and we never found 1 like it.

    He turned down Jackie and President Kennedy’s offer to be the executive chef at the White House. He had been there, done that in France for Charles Degaulle. Worked at the Howard Johnson corporation instead, pioneering the commissary food preparation concept.

    As a boxing fan and a cook, Jacques has a very high work rate. Tireless. I'm always impressed with his first-rate knowledge, manual skill, and respect, but my lord, how he accelerates into separate recipes for the same meal.

    Crazy to think back when the Organic movement started in the US thanks to Alice Waters, it was really the exception unless like Jacques, you could eat out of your own garden. I’ve always bought organic when available but I still wonder today, how truly “organic” food is. A lot of times you find fruit and vegetables that look perfect and are huge as compared to conventional grown foods. Everything is a business nowadays and growers rush to produce what customers want but is our food really organically grown? I had the good fortune to have eaten twice at Alice’s restaurants and will always remember those occasions fondly. Thank you Alice and Jacques!

    Free range chicken eggs, fresh pulled carrots, wild leeks, homegrown tomatoes, dairy fresh milk (with cream on top), mushrooms gathered from the woods, fresh caught fish, hung pheasants and self processed wild game have no comparisons in a supermarket. Of all the gifts I have given my family, the efforts of this lifestyle and incorporating this diet and a love for the kitchen may be one of the most important.

    Thank you for sharing this with us my mom and I used yo watch him all the time on PBS. I also still have the same food processor. I hope tp try all of these recipes. I agree that organic is the best tell that to Monsanto. Today's produce doesn't taste the same as it used to when I was growing up. Jaques Pepin you're the best.
