Minute Recipe: Basil Cheese Dip.
Jacques Pépin demonstrates his regional versions of fried and poached eggs as he makes the classic salad Frisée aux Lardons. Then, with thoughts of summer, he makes spaghetti with fresh tomato and anchovy sauce. In a sweet ending, Jacques talks about spending time with his granddaughter while he makes an impressive-looking -- but simple to assemble -- Chocolate cups and chocolate rocher with hazelnuts and cornflakes.

    You can tell how much he cares for his family. He continually mentions his wife, daughter, and granddaughter. I think it's the sweetest thing. Cooking with love! =)

    I love that he has spent 60 (or so) of his 83 (or so) years in the USA and he is still a Frenchman. We didn't spoil him! And what he has done for us is immeasurable!

    I used to watch his show on pbs when I was little. He is the quintessential chef. He made cooking cool even before Bobby Flay or any of the celebrity chefs were famous. I wish he was still on TV.

    I've been watching Pépin for months thinking I can't make half the meals he does because I do not have a processor. Then I dig around my kitchen and I find a Cuisinart mini-prep grinder. I couldn't believe it! My mum must've bought it years ago and forgotten about it. Time to cook.

    My first fine dining job I was hired on the garde manger side, the cold side, and we had to clean frisée. It was such a frustration to me then, trying to cook desserts, prep cold sides for the grill and wash all lettuce by hand. On particularly busy days you’d get one person to help. The frisée was so finicky, delicate and required expert attention every day. Now I look at that time and think about how easy my life was then. Just tonight I had five salmon, two lamb, two ribeye, a tenderloin, pork chop, three chicken breast on the grill. Four soups, two katsu dons, three mash, was making the sauce for the salmon (we ran out) and heating soup for the expo station on my sauté, two airline, a sea bass and three skewers in the oven at once. Pepin reminds me of every great shift I’ve worked on line.

    I have always loved watching Jacques Pepin cook. Both he and Julia Child were just amazing. They taught us so many things about food, and showed us different ways of doing things in the kitchen. We love you very much Jacques. Thank you KQED for doing such an amazing show

    Add salt after you crush it; it will make it even better. The salt breaks down the garlic.

    @@Barrymacockkiner3050 Well, since I wrote that comment, I have come to the realization that _freshness_ is everything. If the garlic is fresh enough, it works just like he shows. (I tried and tried, and by golly, it works!) If the garlic is _not_ fresh ... can be very frustrating :)

Only drawback is my mouth is watering the whole time l watch, and l'm so hungry for His food afterwards.     12-15-16 Not only is Jacques a great MASTER CHEF, he has such fine ideas on what to cook (and how to do it). I've been cooking fresh spinach and sliced mushrooms as a bed for scrambled eggs. So good, I had it five days in a row!!! When I added the eggs, I moved the operation to a double boiler.... and cooked slowly. Best scrambled eggs ever. Jack Chambles

    I love Jaques because of his attitude, the guy has been a legend for as long as I've been alive and he's still humble. What other guy with his status would use a microwave to cook bacon? He does it because it works! Also I loved the bit where he was like "You know what I love? The corn flake." Then dumps a bunch of corn flakes into the choc/hazelnut mix. He cooks like I do, whatever makes it taste good...

    I made the pasta salad and it was delicious! I'm actually eating it right now! Just changed anchovies with crab meat, parmesan with cream cheese and cilantro with parsley, as these are the ingredients I had handy. But what a satisfying meal! Thank you for sharing!

    all of his shows make me calm and relaxed.. and hungry! unlike his chef contemporaries i feel like going to his house for sunday dinner with his family would be authentic...it would be genuine and unique - i like his french-american cuisine and approach to family dinners and get togethers.

    Marie-Aude Preau It was strictly French cuisine at one time but he's changed show formats several times to stay fresh and relevant with his audience. He's such an amazingly creative guy and he makes it look so effortless. He has class but he's also down to earth and very personable. You feel like you're alone with him in his kitchen and he's giving you a private lesson.

    It's not bland at all. The taste really comes from the olive oil (which he adds a lot, and he stresses it must be very good), the garlic, the anchovies and the cheese. The raw elements add a touch of freshness to the pasta.

    Gotta admire Jacques Pepin, he could have had his choice of prestigious restaurants to work in and he accepted the challenge of working in Howard Johnson's.     Jacques Pepin is to cooking, what Pavarotti was to singing, what Olivier was to acting, and what Wright was to architecture. My new year's resolution is to watch, at least, one episode of this series, each and everyday...Watching Jacques cook is comfort food, for the soul...He's better, than, each and everyone of the cooks/hosts, and most of them are excellent, on the Food Network today.     A ta santé jacques !!! as a french people (i live around lyon) i can tell you he's cooking a real french cuisine ...easy to do , simple and good taste ...and for healty one of the best of the world...just keep an eye about sugar salt and oil it's a bit too much for everyday cooking the rest is perfect ,bon appetit ...

    I love watching classically trained chefs - always "a dash", "a little bit" or "a splash" equates to so much more quantity than how I am used to interpreting those phrases!

    Your pesto looks super delicious! We love using pesto in so many of our dishes! I've never thought about having with crackers! YUM! I've never fried an egg like this before...very interesting! Looks delicious! Love all your recipes!🌷🌼😊
