Sweet Potato Linzer Cookie
Serve: 20 sandwiched cookies (40 halves)
Cookie dough

210 g all purpose flour (sifted)
60 g icing sugar (sifted)
100 g unsalted butter (softened)
40 g milk
1 egg
2 tbsp purple sweet potato powder
1 tsp vanilla extract
¼ tsp sea salt
Preheat the oven to 170 ℃
Bake the heart-shaped tops 10 - 12 minutes, ruffle-shaped bottoms 13 - 15 minutes, or in both cases the edges begin to turn golden brown
White chocolate ganache filling

A few drops electric purple gel food colouring
