Pineapple Buns (Bo Lo Bao)
Make: 12 buns
For the Tangzhong:
100 ml milk
20 g bread flour
For the Bread dough:
125 ml warm milk
1 tsp active dry yeast
50 g caster sugar (divide 40 g + 10 g)
335 g bread flour
1/2 tsp salt
1 large egg
55 g unsalted butter (softened)
1 tsp vegetable oil (for the bowl proofing the dough)
For the Topping:
250 g all purpose flour
1/4 tsp baking soda
1/4 tsp salt
113 g unsalted butter (softened)
80 g caster sugar
1 large egg
1/2 tsp vanilla extract
For the Egg Wash:
1 egg (separated)
Preheat the oven to 180℃
Bake the buns for about 18 to 20 minutes or until golden brown
I was inspired by the Pineapple Bun (Bo Lo Bao) recipe in Mooncakes & Milk Bread by Kristina Cho to create this version. I skip the step of making the crosshatch pattern.

    An inappropriate and culturally insensitive comment. So easy to try and be smart. This is the name of a traditional bun found everywhere in Hong Kong.

    Maybe the name comes from the look. The upside reminds me a bit on the skin of a pineapple fruit :)

    Interesting question! Did you know pineapple buns are named for their topping, not the inside? They have a golden brown crust that's flavored and colored to resemble pineapple, but they don't actually contain any fruit. Still, they're a delicious treat.
