Today I would like to make something rather different! We will make a very easy homemade lavash, skipping all the processes like kneading, rising, and rolling! Plus, we will directly cook it on a pan. Then we will turn the lavash into a gorgeous borek with vegetarian and vegan versions. Don't miss this recipe, go to your kitchen and try it! Difficulty: Easy
Prep time: 5 minutes
Cooking time: 2 minutes
Homemade Lavash
1 cup + 1 tablespoon flour,
1 cup water
Half teaspoon salt
Olive oil
Vegetarian Borek
30 g grated mozzarella cheese,2 tablespoons, any melting cheese would do perfect
7-8 walnuts, roughly chopped
Fresh mint leaves
Vegan Borek
Half avocado, pureed
1 pinch salt and black pepper
1 handful peanuts
Basil leaves
• For homemade lavash, whisk the flour, water, and salt in a mixing bowl until combined. It will have a crepe consistency.
• Heat a small non-stick pan and pour some olive oil to cover the pan.
• Drop a ladle of batter onto the pan and tilt with a circular motion so that the batter coats the surface evenly.
• Cook for about 2 minutes, then flip and cook 1 minute more. Repeat with the remaining batter. It is important to not to overcook. Otherwise, it will be crunchy, and you won’t be able to wrap it.
• When you remove it from the pan, it is ready to serve.
• To make the vegetarian börek, cook one side of the lavash for a minute and flip. Place the mozzarella cheese, walnuts, and fresh mint leaves on half of the lavash. Leave some space from the sides. Fold the other side over the filling and seal with a wooden spoon.
• Cook both sides until brown and serve hot.
• For the vegan börek, season the avocado with salt and black pepper, then place on half of the lavash. Place the peanuts and basil leaves. Leave the edges clean for sealing. Fold the other side over the filling and seal with a wooden spoon. Cook both sides until brown and serve hot. Bon appetit!

    Thank you very much for your recipe. My kids loved it and the smaller one with 1 year even cried when it finished. He was so delighted by it. Really wanna thanks with all my heart ❤️ We are currently in Ukraine in the middle of this war. To find this recipe that takes minimum amount of ingredients was a life saver! Luckily I have 2Kg of flour and will be feeding my family with it. I hope better time comes, not only for us in Ukraine, but to all of us. And that mankind finally sees that we are all part of the one, all nature, all men just small parts of the same God. It does not matter how you name it and being against each other for stupids believes and spreading the hate is like hurting God.     Today I tried Lavash for the first time. I’m Hispanic & grew up in a multiracial neighborhood & I was very fortunate to try different foods and have so many wonderful friends.     Love all your videos and delight in rewatching older ones that I have not watched. Your English is beautiful and because you are explaining things so well it becomes poetic. I worked at a University and had many students who spoke 2, 3, or 4 languages. English was the newest addition. My favorite memory was of a Lebanese woman studying early childhood education. She wrote of watching the small children she taught “ripening like sweet fruit before my eye.” It made me cry- such a wonderful image. Her professor didn’t understand and marked her down. The foolish professor has a single PhD. This woman had three! She was a gift to me, and every single person she encountered. If people don’t understand you, it is because they do not listen with their ears or their hearts. Thank goodness you and your crew can touch so many people with your sweet spirits.     Refika, your English is great…much better than my Turkish… which is nonexistent. 🤣 Bahar, in America the idea of using mint in a sandwich is not a thing. I feel like mint is one of the least used herbs in American food. Maybe my fellow Americans can correct me by reminding me of recipes, other than drinks, that we use mint in. Refika has taught me to love both fresh and dried mint in lots of savory dishes. Yum 😍

    Great video and an excellent idea. What I love most is that it allows us to be creative with the filling, use leftovers to minimize waste (very important) and that it's much healthier than whatever you can buy from a super market. Lot's of love from Greece❤

    It is common for Turks to call everything "Turkish". Lavash has been known and will always be "ARMENIAN".

    @@Refika lunch was a big success. I made a version of your protein bomb salad, I only had a green pepper, so I added some cherry tomatoes along with the green pepper, I used fresh coriander instead of dill and I used fresh cucumber instead of the pickles because I didn’t have them. My lavash was more like a pancake than a bread that yours seemed to be but I think I needed a different pan - I used a cast iron skillet. The taste was great though. X

    Happy birthday to Burak! I love lavash! I'm going to have to try this! Bahar: Where I live in the US mint is used mostly for tea and sweets. It's unusual to use it for a savory dish. When I first encountered it in Lebanese food I thought it odd, but grew to love it. (I've got four kinds of mint in my garden. I may be a bit over the top!)

    Lovely bread recipe, versatile. I do béchamel sauce and mix my other ingredients ie. Cheese, asparagus, even cooked mince meat, fold over and finish browning. Mix crumble feta, mint + 1 egg and stuff the bread like pancake 🇬🇧🇬🇧

    Your English is better then 95% of english spoken ppl which learned they English from moment they been born. You talk in proper grammar for what they do not know neater the meaning of.
