Italian Chocolate Cake Recipe

Italian Chocolate Cake or Torta di Caprese.
Ingredients :
4 eggs separated
85 g of Almond toasted and reduced in powder
85 g of Hazelnut toasted and grounded
170 g of Butter at room temperature
170 g of Iced sugar
14 g of unsweetened cocoa powder
4 g of baking powder
25 g cornstarch
Pinch of salt
170 g of Dark chocolate grated or (120 g of dark chocolate & 50 g of milk chocolate)
Icing sugar to garnish
Directions:
1/ To prepare torta di Caprese, start by mixing butter with half
of sugar, a pinch of salt, and add the egg yolks, mix well.
Set this mixture on one side [mixture A]
2/Mix all the dry ingredients together: grated chocolate, almonds powder
hazelnuts powder unsweetened cocoa powder, cornstarch, and baking powder.
Mix well and leave it to one side.[mixture B]
3/In another bowl whisk the egg whites with the rest of the sugar until they form soft peaks and become brilliant.[mixture C]
4/ Preheat the oven to 170 ° Celsius, and start to mix all the preparation:
add a third of the beaten egg whites to [mixture A], mix well then add a third of [ mixture B], and mix well.
Continue by alternating white eggs and dry ingredients to [mixture A] until you have a creamy paste.
5/Pour the mixture in a cake pan 22 cm
6/ Bake the torta for 45 minutes
Once cooked, let cool completely then dust the top with icing sugar or cocoa before serving.
