JOIN MAMA HOSS IN THE KITCHEN! Tonight we are picking and canning Butterbeans that were given to Greg at the Pedals of the Past Meet and Greet.
These butterbeans are from Alabama, and we will be using a pressure canner for this process, which uses extreme heat which to kill any bacteria that may have formed!

I’ve looked everywhere for speckled butter bean seeds. A bowl of them, some cornbread and sliced tomato were one of my favorite childhood meals.

I was raised growing and storing but got away from that after getting into the earning a living portion of my live. I'm retired now and at 75, I need to relearn my roots and use my spare time. Sitting on Nana's glider seat, listening to her humming, shelling peas and snapping beans. Ducks on the pond and garden swaying. :) Gosh I miss that simple bliss. I am so blessed to have had that as a child. Children are missing so much in this crazy today.

I grew these last year. They are heavy producers and grow all season. I used them green as Lima beans and let some dry on the vines and later cooked in a crock with some hog jaw as butter beans. You get a different flavor from green fresh to dried.

@@gardeningwithhoss do you ever put whole okra in you beans. My mama would also put okra in if we had fresh okra. And then we'd usually have fried pork chops too. Man that is good eating. Lots of pot liquor (licker). Haha

when my daughter was pregnant with her last child she would sit under my oak and shell beans/peas all day long. And ask for more.............lol
Hi again, thank you for your previous response to my Christmas lima bean questions. At this stage in the harvest, there are not that many that are ready to be canned but since I am canning them for someone else, I am not eating them as they ripen. My question is, is it OK to soak and then freeze them until I have enough to pressure can? Thank you in advance.

If I can ever get the timing right on my lima beans I will have to return to this video!
My first year growing Limas (your bush lima variety). I'm pleased with the quantity I'm getting. I don't have a pressure cooker, do you think they could be done using a water bath method? Or if I wanted to dry store them, would I just let them dry out and then put them in a jar?

Because of the low acidity, it does require pressure canning if done fresh.

Good morning from Virginia! This is my first time growing limas and I’m in the process of harvesting Christmas Pole Lima beans. It’s taken me a few days to find out if I need to wait for the beans to darken to the speckled color or if the plain white stage is good. In the meantime the shelled beans have been on the counter for two days. I will be pressure canning them but are the ones that have been sitting out unsafe to use now? Put an add on your local face book and craigslist I'm sure a farmer will be obliged to sell you some if your in southern Arkansas I can help you in about 2 weeks

no, these are fresh and are not dried
Is it too late to plant watermelons as long as you beat the last frost I was told they won't be sweet was wondering Greg's opinion on it

You will need to beat the frost and have a cushion of 1-2 weeks harvest window.
My fingers used to get so sore. I was the child slave labor for shelling beans and peas. Lol

Me too but didn’t think about it when we were all eating green butter beans, cream corn, sliced tomatoes, and fried chicken around the supper table. I Don’t think it ever crossed my mind as a child that all that shelling and shucking was helping with supper time. Just knew we didn’t like it. Funny how I look back on those times now and remember laughter, sharing, and drinking a cold coke with peanuts when we took a break. Those memories are beautiful to me now. Wonder if my kids will ever look back on their slave labor and reminisce. Bahaha Have a beautiful day sweet online friends. Love our homestead community.

According to my Ball Blue Book. Beans- lima and butter 50 minutes for quarts, these were fresh Dried beans 1 hour and 30 minutes
